Stewed Rhubarb Dessert

Make this stewed rhubarb dessert recipe for a dish the whole family will love! This is the sort of recipe that is passed from generation to generation. Cooking rhubarb has never been so easy, and it is pure heaven when served with yogurt and almonds. You can also serve it on pound cake, as well as on its own in a bowl. It’s also great when served with a scoop of ice cream on top.


  • 8 C. rhubarb, diced
  • 1 C. sugar
  • 1 3 oz. pkg. strawberrt gelatin


  • In a large saucepan, combine rhubarb and 1/2 cup water. Cover and bring to a boil.
  • Reduce heat to low and simmer for 15 minutes or until rhubarb is tender. Stir occasionally.
  • Remove from heat and add sugar and gelatin. Stir until dissolved. Place in a large bowl and store in refrigerator.
  • Try stewed rhubarb over vanilla yogurt and topped with almonds. Or spread the stewed rhubarb over the top of vanilla ice cream!
