Season 3 lbs. turkey cutlets.
In a pan heated with oil, cook turkey cutlets 3 minutes on each side.
When turkey cutlets are cooked, deglaze the pan with apple cider vinegar and save the liquid.
Over a bowl, zest 1 orange.
In the same bowl, juice 2 oranges.
In another pan, melt 1/4 cup butter. Add pan drippings, orange juice, 3 T. Dijon mustard, and maple syrup. Allow sauce to reduce.
In the same pan as the sauce, cook turkey cutlets for a few additional minutes.
