Chicken Gyro Recipe

Ingredients

  • 2 lbs. chicken breast
  • 1/2 English cucumber, shredded
  • 4 t. garlic
  • 1/2 red onion
  • 1 1/2 t. lemon juice, freshly squeezed
  • 2 cloves garlic
  • 1 T white wine vinegar
  • Salt and pepper
  • For the MARINADE:
  • 1 C. Greek yogurt
  • 1 clove garlic, chopped
  • 2 T olive oil
  • 1 t. lemon juice
  • 1 T. white wine vinegar
  • 1 T. oregano
  • Salt and pepper
  • Dill

Instructions

  • Marinate 2 lbs. chicken breast in a marinade consisting of Greek yogurt, garlic, olive oil, white wine vinegar, oregano, dill, salt, and pepper. Do so for about 2 hours, or no longer than 24 hours.
  • Cook chicken over medium heat on a grill pan, or on an outdoor grill.
  • Cook until the crust is a nice brown.
  • In a bowl, place shredded cucumber, garlic cloves, and lemon juice.
  • Add Greek yogurt, white wine vinegar, salt, and pepper.
  • Combine.
  • Thinly slice the cooked chicken.
  • Place chicken, sauce, and fresh vegetables of your choice in pita bread.
  • Serve and enjoy!
