Cajun Chicken Dip

Ingredients

  • 1 package low-fat cream cheese
  • 1 C. Greek yogurt
  • 1/2 C. mayonnaise
  • 1 t. hot sauce
  • 1 1/2 t. Cajun seasoning
  • 3 green onions, chopped
  • 1/4 red bell pepper, chopped
  • 1/4 green bell pepper, chopped
  • 1 garlic clove, chopped
  • 8 oz. pepper jack cheese, shredded
  • 2 C. chicken breast, cooked and chopped

Instructions

  • Preheat the oven to 350 degrees. Chop your vegetables, including the red and green bell peppers, green onions, and garlic clove.
  • Chop the chicken breast into 1" pieces.
  • Place vegetables and chicken in a large mixing bowl.
  • Add the cream cheese, mayonnaise, and Greek yogurt to mixing bowl.
  • Add the hot sauce and Cajun seasoning. Kick up the amount of hot sauce for added spice.
  • Mix well.
  • Add half of the shredded cheese and mix.
  • Place mixture in 8″ x 8″ baking dish.
  • Top mixture with remaining cheese. Bake for 30 minutes.
  • Serve and enjoy!

Notes

Tip: This dip can be assembled up to 1 day ahead of time. Just wait to bake it until you’re ready for guests to arrive. It’s best served warm when the cheese is gooey and delicious!
