Place 8 oz. mascarpone (or cream) cheese into a mixing bowl.
Add 1 teaspoon pure vanilla extract.
Add 1 cup powdered sugar. Mix.
Scoop 1/3 of mixture into frosting piping bag with small star tip.
Cut off the tip of the strawberries. Remove the green.
With a knife or spreader, stack cream cheese mixture onto strawberry. Top that with the cut strawberry tip. With the frosting piping bag, carefully top strawberry with cream to form a hat. Use chocolate chips for eyes.
