Beef and Hash Brown Casserole

This tasty make-ahead meal will satisfy even the pickiest eaters. A hash brown crust topped with seasoned ground beef and crispy fried onions that can be prepared ahead and frozen up to 6 months. A good hot dish for people on the go!

Ingredients

  • 4 C. frozen hash browns
  • 2 C. frozen green beans or vegetable of choice
  • 3 T. vegetable oil
  • 1 2.8 oz. can French fried onions, divided
  • 1 lb. ground beef
  • 1 C. shredded Cheddar Cheese divided
  • 1 small envelope Brown gravy mix

Instructions

  • Preheat oven to 350 degrees. Start out by adding vegetable oil to the hash browns and stir well.
  • Pack the hash browns into the bottom of an 8 by 8 inch pan and bake in the oven for about 15 minutes.
  • In a pan on medium heat, start browning the hamburger.
  • After the hamburger has been browned, drain the grease and add a cup of water and the packet of gravy to the hamburger. Bring it to a boil so that the gravy will thicken.
  • Add vegetables of your choice, half of the cheese, and half the can of French’s fried onions to the hash browns. Then add the hamburger. Layer the rest of the fried onions and cheese on the top.
  • Cover the pan with tinfoil and you are now ready to bake in the preheated 350 degree oven for 35 minutes. Take off the foil ad bake it another 15. Or you can put it in the freezer for up to 6 months. If that is what you do, you will need to let the casserole thaw in a refrigerator overnight before you bake it.
