Spinach Greek-Style Pizza

Don’t ignore your craving for pizza if you’re on a diet. This delicious recipe lets you chow down on some scrumptious pizza without the guilt.

Ingredients

  • 1 lb. frozen bread dough, thawed
  • 1 lb. skinless chicken, chopped or ground
  • 1 cup seeded and chopped red or green bell pepper
  • 1 tsp. minced garlic
  • 1 15 oz. can Italian style tomato sauce
  • 1/2 tsp. oregano
  • 1 10 oz. package frozen chopped spinach, thawed and drained
  • 1 cup shredded reduced-fat part-skim mozzarella cheese (or fat-free cheese)
  • 1/2 cup grated Parmesan cheese

Instructions

  • Preheat oven to 375 degrees. Coat lightly a 12” pizza pan with a little olive oil to help browning and potential sticking.
  • Press the dough into the pan, forming a 1” crust around the edge. Prick the dough with a fork. Bake the dough for 10 minutes.
  • Meanwhile, in a medium skillet over medium high heat, cook the chicken, onion, bell pepper and garlic until the chicken is cooked through and no longer pink.
  • Stir in the tomato sauce and oregano; set aside.
  • Remove the crust from the oven; sprinkle drained spinach over top.
  • Spread the chicken sauce mixture over the spinach. Sprinkle the mozzarella and Parmesan cheese over the sauce.
  • Bake for 25 minutes or until the crust is lightly browned and the cheese is bubbly. Remove the pizza from the oven and let sit for 2 to 3 minutes; cut into 8 slices.
