Place cherries in a strainer and press down. Strain out all of the juice. Save the juice for later if you like.
Add sugar, cornstarch, cinnamon and ginger to cherries.
If you are using a homemade crust, roll it out.
Place the crust in your pie pan. Poke holes in with a fork to prevent the filling from bubbling over while cooking.
Place cherry filling into the pie pan.
Make an egg wash with an egg. Brush the crust and filling.
Roll out more dough and cut it into strips. Brush with egg wash.
Lay the strips across the pie filling.
Remove the edges.
Brush with egg wash again and sprinkle with sugar.
Prepare your smoker.
Place the pie inside. Allow time to cook until crust is golden brown, about 1 hour.
Allow time to cool once cooked. Serve and enjoy!
