Ingredients

  • 1 9" Pie crust
  • 2 1/2 lb. Red Pie Cherries
  • 1 c. Sugar
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Ginger
  • 2 tbs. Cornstarch
  • 1 egg, for egg wash

Instructions

  • Place cherries in a strainer and press down. Strain out all of the juice. Save the juice for later if you like.
  • Add sugar, cornstarch, cinnamon and ginger to cherries.
  • If you are using a homemade crust, roll it out.
  • Place the crust in your pie pan. Poke holes in with a fork to prevent the filling from bubbling over while cooking.
  • Place cherry filling into the pie pan.
  • Make an egg wash with an egg. Brush the crust and filling.
  • Roll out more dough and cut it into strips. Brush with egg wash.
  • Lay the strips across the pie filling.
  • Remove the edges.
  • Brush with egg wash again and sprinkle with sugar.
  • Prepare your smoker.
  • Place the pie inside. Allow time to cook until crust is golden brown, about 1 hour.
  • Allow time to cool once cooked. Serve and enjoy!
