Creamed Chipped Beef on Toast

- 5 oz. dried beef
- 1/3 c flour
- 1/3 c butter
- 3 c milk, whole
- Salt
- Pepper
- Texas toast or biscuits, if desired
- white vinegar

Roll 5 oz. dried beef and cut into strips. Set aside.
Melt butter in pan.
Add flour and stir constantly until flour has incorporated.
Consistently stir in milk to make a roux.
Stir until sauce thickens. Add salt and a generous amount of pepper.
Add sliced dried beef. Mix and remove from heat.
Bring water to a boil in a saucepan. Add white distilled vinegar. Crack eggs into coffee cup. Place eggs slowly into water using the coffee cup.
Use a slotted spoon to remove and drain eggs.
Place beef mixture on top of toasted bread or warm biscuits. Place poached eggs on top and serve warm.
