Banana Split Cheesecake Squares
Try these Banana Split Cheesecake Squares, a fun twist on a summer favorite!
- 2 C. graham cracker crumbs, about 14 whole
- 1/3 C. butter, melted
- 1 C. sugar, divided
- 3 8 oz. pkg. cream cheese, softened
- 1 t. vanilla
- 3 eggs
- 1/2 C. mashed bananas
- 1 C. halved strawberries
- 1 banana, sliced and tossed with 1 t. lemon juice
- 1 8 oz. can chunked pineapple drained or one fresh pineapple diced
- 1 container whipped topping
Mix crushed graham cracker crumbs, butter, and 1/4 cup sugar. Press onto bottom of a 9″ x 13” baking pan.
Mix cream cheese, remaining 3/4 cup sugar and vanilla with electric mixer until well blended. Add eggs and mix until blended. Stir in the mashed banana.
Pour mixture into crust. Bake at 350 degrees for 30 minutes or until center is almost set; cool. Refrigerate 3 hours or overnight.
Top with whipped topping, strawberries, sliced banana and pineapple. If desired, sprinkle with nuts, add a cherry, and drizzle with chocolate syrup. Cut into squares.
