Banana Split Cheesecake Squares

Try these Banana Split Cheesecake Squares, a fun twist on a summer favorite!

Ingredients

  • 2 C. graham cracker crumbs, about 14 whole
  • 1/3 C. butter, melted
  • 1 C. sugar, divided
  • 3 8 oz. pkg. cream cheese, softened
  • 1 t. vanilla
  • 3 eggs
  • 1/2 C. mashed bananas
  • 1 C. halved strawberries
  • 1 banana, sliced and tossed with 1 t. lemon juice
  • 1 8 oz. can chunked pineapple drained or one fresh pineapple diced
  • 1 container whipped topping

Instructions

  • Mix crushed graham cracker crumbs, butter, and 1/4 cup sugar. Press onto bottom of a 9″ x 13” baking pan.
  • Mix cream cheese, remaining 3/4 cup sugar and vanilla with electric mixer until well blended. Add eggs and mix until blended. Stir in the mashed banana.
  • Pour mixture into crust. Bake at 350 degrees for 30 minutes or until center is almost set; cool. Refrigerate 3 hours or overnight.
  • Top with whipped topping, strawberries, sliced banana and pineapple. If desired, sprinkle with nuts, add a cherry, and drizzle with chocolate syrup. Cut into squares.
