Preheat oven to 350 degrees. Chop 1/2 cup pecans or walnuts. In a large bowl, add 2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Blend.
Add 1/2 cup pecans or walnuts to mixture. Blend again. Set aside.
Place 1/2 cup softened butter in a mixing bowl. Add 1 cup sugar and 1 egg. Mix until smooth.
After smoothness has been reached, stop. Add 1 egg and 1 teaspoon vanilla extract. Blend.
Add 1 cup shredded apple into mixture and stir.
Spread mixture evenly into 5 x 9″ pre-seasoned loaf pan. The Rada Stoneware Loaf Pan needs no pre-seasoning, but you will need pre-seasoning if using a metal pan. Bake in preheated 350 degree oven for 40 to 50 minutes.
Remove from heat. Let stand before removing bread from pan. Cut, serve, and enjoy!
