  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 2 eggs, lightly beat
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts
  • 1 cup peeled shredded apple, any variety

Instructions

  • Preheat oven to 350 degrees. Chop 1/2 cup pecans or walnuts. In a large bowl, add 2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Blend.
  • Add 1/2 cup pecans or walnuts to mixture. Blend again. Set aside.
  • Place 1/2 cup softened butter in a mixing bowl. Add 1 cup sugar and 1 egg. Mix until smooth.
  • After smoothness has been reached, stop. Add 1 egg and 1 teaspoon vanilla extract. Blend.
  • Add 1 cup shredded apple into mixture and stir.

  • Remove from heat. Let stand before removing bread from pan. Cut, serve, and enjoy!
