The Lunchroom Lady’s Peanut Butter Bars

Remember those days in school when the lunchroom lady had something special cooked up, and you and your classmates raced to be the first to take a delicious bite? A buttery, rich confection made with peanut butter and chocolate frosting.  Now you can make the same bars at home for yourself and your family. and watch everyone race to the kitchen to be the first to have a bite!

Ingredients

  • 3/4 cup butter or margarine, softened
  • 1 cup + 4 Tbs. peanut butter
  • 1/4 cup white corn syrup
  • 1/2 tsp. salt
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1 1/2 cup flour
  • 3 Tbs. cocoa
  • 2 cup powdered sugar
  • 1/5 cup hot water or milk

Instructions

  • Place 1 1/4 stick butter or margarine and 1 cup peanut butter into mixer. Mix on medium for 3 minutes. Add 1/4 cup white corn syrup, 1/2 tsp salt, 1 1/2 cups sugar, and 3 eggs. Mix 3 minutes.
  • Add 1 1/2 cup flour into batter, mixing as you pour. Mix until flour is incorporated. Do NOT over mix!
  • Place mixture in 15 x 10 inch pan. Spread. Bake in 325 degree pre-heated oven for 30 minutes
  • In a separate bowl, mix 3 tablespoons butter or margarine, 4 tablespoons peanut butter, 3 tablespoons cocoa, 2 cups powdered sugar, and 1/5 cup hot water or milk. Mix together until smooth.
  • After allowing peanut butter bars to bake and cool, spread frosting evenly across the top. Cut, serve, and enjoy!
