Chicken Tacos Recipe
From the cookbook Fix, Freeze, Take and Bake, this recipe is easy to make ahead of time if you have a hectic lifestyle. Get the whole family in on making this recipe and enjoy it together when you’re done. What you will need:
- 2 ½ cups cooked cubed chicken
- 1 (15 ounce) can kidney beans, drained
- Drained ½ teaspoon ground cumin
- 1 tablespoon vegetable oil
- 1 medium onion, sliced with green chilies, drained
- 1 ½ teaspoon chili powder
- ½ teaspoon oregano
- ½ teaspoon ground cumin
- 1 (10 ounce) can diced tomatoes
Directions:
In a medium bowl, toss together chicken and drained kidney beans. Set aside.
In a medium skillet, heat vegetable oil. Add peppers and onions.
Saute peppers and onions over high heat.
Saute peppers and onions until browned.
Add chili powder, oregano and ground cumin. Saute for an additional minute.
Stir in drained tomatoes with green chilies and bring to a boil. Let simmer for about 5 minutes.
Add chicken and beans to skillet, stirring to combine.
Allow to cool and transfer to a freezer bag for freezing. You can individually bag this into single serving sizes, which makes a great quick and healthy snack for after school or a quick meal when running late from work or sports practice.
Freeze up to 6 Months!
To Prepare from the Freezer: thaw in refrigerator or microwave. In a skillet, heat chicken over stovetop or in microwave. Serve as tacos or tostadas with cheese, lettuce, tomato and salsa.
