Hi, welcome to the Rada kitchen, my name is Kristy, and today we’re going to make a recipe from our Unforgettable cookbook. It’s 100 years of timeless American recipes, and this one I’m getting out of the 1990’s. It’s a Tomato Mozzarella Salad. Another neat thing about this cookbook is that it has little tidbits about what happened during each decade. It goes from 1900 to 2000. It’s really interesting. So let me show you how to make this Tomato Mozzarella Salad. It’s super easy.

What you need is 4 medium sized ripe tomatoes. To slice this I’m going to use the popular Rada Tomato Slicer. The knife does all the work. You don’t have to push hard because the teeth cut through all that skin. Then I have some fresh mozzarella, about 8 ounces. With the Rada Cheese Slicer I’m going to cut it into slices. The Cheese Slicer slices soft and hard cheese. It makes nice, even slices.

Lets set that aside. Then you’ll need 2 tablespoons of basil leaves. Cut them into strips. I saw a neat way to slice fresh basil. I grew this in a pot on my patio. It’s really fun to grow. To cut this I take that Tomato Slicer and rolled the basil up like a cigar. You make little cuts across. There you have your basil leaves.

On a serving platter you’ll alternate slices of tomato and the cheese. Now you’re going to sprinkle basil on top. It’s really good on pizza. It’s crispy. Now we’re going to drizzle olive oil lightly over the top. And if you like balsamic vinegar you can sprinkle that lightly over the top. And then salt, a little pepper.

And you want to serve this at room temperature. It’s a delicious, easy salad to make that’s really pretty to look at. That’s just one of the recipes in our Unforgettable cookbook.
