Simple Meals for Super Bowl Sunday!

We all learned how to roll with the punches in 2020, so no matter how your Super Bowl celebration plans shake out for 2021 and beyond, you can still make it a great day, with GREAT FOOD!

The last thing anybody wants on game day is to spend a ton of time in the kitchen. These three delicious recipes use only a handful of ingredients, take very little time to throw together, and assure you’ll be sitting in front of the TV with all your favorite people in plenty of time for the kickoff.

So put on your favorite jersey and lucky socks, play a game of commercial BINGO, and sing along with the halftime entertainment. The game’s about to begin, and the food is gonna score big.

  WHITE CHICKEN PIZZA


  INGREDIENTS
(Makes 2)

  2 (6″) prebaked pizza crusts
  2½ T. garlic & herb butter spread
  Provolone cheese (6 big slices plus ¼ C. shredded)
  1 C. frozen popcorn chicken, thawed
  Diced tomato


DIRECTIONS

Preheat the oven to 450° and set the crusts on an ungreased baking sheet.

Melt the butter spread, drizzle it over the crusts, and spread it around evenly. Cover each crust with half the cheese slices. Cut the chicken into bite-size pieces an arrange over the cheese. Sprinkle the shredded cheese over the top.

Bake for 9 to 11 minutes or until the cheese is melted and lightly browned. Top with diced tomato.

BBQ PORK WITH GLAZED APPLES


INGREDIENTS
(Serves 6)

4 C. cooked & shredded pork roast
1 C. smoky BBQ sauce
⅓ C. frozen apple juice concentrate
Butter
1 lg. apple, cored & sliced (try Rome, Gala, or McIntosh)
½ tsp. cinnamon-sugar
6 buns

DIRECTIONS

Combine the pork, BBQ sauce, and juice concentrate in a saucepan; heat until warm, stirring often.

Meanwhile, melt a little butter in a skillet over medium heat. Add the apple along with the cinnamon-sugar and cook for 5 to 6 minutes or until tender, stirring constantly.

Serve the pork and apples together on buns.

CRUNCHY FISH TACOS


INGREDIENTS
(Makes 8)

8 frozen battered fish fillets or tenders (about 2 oz. each)
8 (6″) corn tortillas or taco shells
Shredded green cabbage
Black bean & corn salsa
Red onion
Sour cream & cilantro, optional

DIRECTIONS

Bake the fish according to package directions. Meanwhile, if using tortillas, fry them one at a time in a little vegetable oil in a skillet over medium heat until just beginning to brown on one side; flip the tortilla over, fold to form a taco shell, fry until golden brown and crispy on both sides then transfer to paper towels to drain.

Fill fried or purchased shells with baked fish, cabbage, salsa, and onion. Top with sour cream and cilantro.
