Coconut Cream Pie Recipe
Ingredients you will need:
- 3 cups half n’ half
- 2 eggs
- 3/4 cup sugar
- 1/2 cup flour
- 1 cup shredded coconut, toasted, divided
- 1 (9″) pre-baked pie crust (link to Rada’s easy pie crust recipe)
- 1 cup whipped topping
- 1/4 teaspoon salt
- 1 tsp. vanilla
In a medium saucepan, combine 3 cups half n’ half, 2 eggs, 3/4 cup sugar, 1/2 cup flour, and 1/4 teaspoon salt. Bring mixture to a boil over medium hit, stirring constantly. Remove from heat and stir in 3/4 cup shredded coconut and vanilla.
Pour mixture into 9″ pre-baked pie crust.
Spread evenly across pie crust. Place in refrigerator from 2 to 4 hours.
Add whipped topping to top of pie, spreading evenly.
Add toasted coconut to top of whipped cream.

Coconut Cream Pie Video Transcript
Hi, Kristy in the Rada Kitchen, and today I’m going to be making an old-fashioned coconut cream pie. This is out of our No Bake Cookies, Bars and Pies recipe book. It’s filled with 120 fast, easy, and delicious recipes. What you need is a pre-baked 9-inch pie crust. This was one I made, if you want to click up here there’s directions on how to do that.
In a medium saucepan we’ll put my heat from low to medium. We are going to take 3 cups of half ‘n half. We’re going to add 2 eggs, ¾ cup of sugar, a half cup of flour. This Rada Handi-Stir makes all this ingredient combining easy, and ¼ teaspoon salt. What we’re going to do is bring that to a boil, but you’re going to have to stir it constantly so it doesn’t burn on the bottom.
Now we’re going to pour our mixture into the pie crust. We’re going to put this in the refrigerator then we’ll come back and put some whipped topping and toasted coconut in there. It makes a beautiful looking pie. I take these to bake sales and they’re the first that get sold. So I’ll put that in the refrigerator for 2 to 4 hours.
So my coconut cream pie has been in the fridge for a couple hours. Now you just take a cup of whipped topping. You can whip up your own or use a prepared one. This Rada Super Spreader is just the right size to spread toppings on pies, frostings on cakes. Then I have my ¼ cup of toasted coconut. We’re going to sprinkle that on top.
