Mussels Marinara Recipe
Ingredients you will need:
- 1 1/2 lb. live mussels, de-bearded and cleaned as shown in video
- 1 Rada Quick Mix Marinara Sauce, made to package instructions
- 1 14 oz. can petite tomatoes (for the Quick Mix)
- 1 12 oz. can tomato paste (for the Quick Mix)
- 1/2 sweet onion, fine dice
- 1/2 green pepper, fine dice
- 1/2 lb. unsalted butter
- Olive oil
- 1 teaspoon garlic
- 1/4 cup sugar
- 3 cups seafood stock or white wine
- 4+ tablespoons minced garlic, to taste
- 4 tablespoons season salt, to taste
- Angel hair pasta (or other if you prefer) cooked al dente
Go through 1 1/2 lb. live mussels, discarding open mussels, keeping closed ones. In a saucepan, begin to prepare angel hair pasta (or pasta of choice).
Clean mussels in sink under fresh water. A knife such as the Rada Peeling Paring can be useful for removing the hair-like material covering the mussels.
Put 2 cups water in a saucepan. Add a packet of Rada Quick Mix Marinara Sauce.
Add 1 14 oz. can petite tomatoes and 1 12 oz. can tomato paste to saucepan. Bring to boil on stove. Once boil is reached, reduce to low heat and let simmer for 10 minutes.
Fine dice 1/2 sweet onion.
Fine dice 1/2 green pepper.
On the stove, place 1/2 lb. unsalted butter in saucepan with a small amount of olive oil, garlic, and season salt. Add diced onions and green peppers.
Add 1/4 cup sugar to the butter mixture. Stir. Add 1 1/2 cup white wine or seafood stock. Add mussels to mixture and cover, allowing to simmer. After a few moments, add another 1 1/2 cup white wine or seafood stock.
When all is finished cooking, place marinara over pasta.
Place mussels over marinara.
Serve and enjoy!

Hi, I’m Chef Ted, and I’m here in the Rada Cutlery kitchen. Today I am going to use one of the Rada Quick Mixes and make a mussels marinara over angel food pasta.
First thing you want to do is go through and find all the ones that are open and closed. If they’re open, they’re possibly not alive, and you want them to be fresh and alive. So I just separate the two of them out. So far I’m doing pretty darn good here.
This looks like how it turned out. We got a pretty fresh bag, so we’re going to take these over to the sink and clean them down.
What I like to do is take them and run them under fresh water. Basically you’re just trying to remove the beards, which are hair-like things. The Rada Peeling Paring Knife works really good at cutting some of that away. When it comes to mussels you don’t want to leave them in standing water. They come from underwater but there’s something about after they’re caught where the fresh water we use doesn’t react well with them at all. This one here has decided to open up a little bit.
The Rada Quick Mixes are really easy, they’re really handy. I’ve got 2 cups of water in the saucepan. I add the entire packet of Quick Mix. We’ve got a 14.5 ounce can of petite cut tomatoes. And one 12 ounce can of tomato paste. I’m just going to bring it over the stove and use the Rada Handi-Stir to bring it to a boil.
I’m just going to really fine dice half an onion and half a green pepper. Back over at the stove and I’m going to throw in a stick and a half of butter and a little bit of olive oil. A little garlic. Some season salt. Use salt, pepper, throw Italian seasoning in as well. Now I’m going to add vegetables. If you don’t like something, leave it out.
The marinara has come to a boil so I am going to take that down to a low-medium low heat and let that simmer for 10 minutes.
Over here I have add a quarter cup of sugar to the butter, olive oil, pepper, onion, and seasoning mixture. Now I’m going to add about a cup and a half of seafood stock or white wine. Now that I’ve got this going at a good roiling boil, I’m going to add the mussels in. I’m going to seal it up with a lid to hold the heat in. Going to add another cup and a half of seafood stock to this. I’m going to add the leftover shrimp.
Here we have the Rada Quick Mix marinara. I’m going to put that over angel hair pasta. This shrimp and mussel combination with vegetables and stock sauce goes on top. And there you have mussels marinara using a Rada Quick Mix marinara sauce. Fresh mussels and shrimp!
