Fudge Brownie Bliss Recipe

Ingredients you will need:

  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 1/2 tablespoon brown sugar
  • 1/8 teaspoon vanilla
  • 1 tablespoon unsweetened cocoa powder
  • 1 egg yolk
  • 3 tablespoons flour
  • Pinch of salt
  • 2 tablespoons chocolate chips
  • Your favorite toppings, optional

Partially melt 2 tablespoons butter in microwave at 70% power for 20 seconds.

Add 2 tablespoons sugar, 1 1/2 tablespoon brown sugar, and 1/8 teaspoon vanilla to melted butter.

Stir.

Kristi mixes butter and sugars.

Add 1 egg yolk and stir.

Kristi adds egg yolk to mixture.

Add 3 tablespoon flour and a pinch of salt. Stir.

Kristi adds flour and salt to mixture.

Add 2 tablespoons chocolate chips. We used semi-sweet mini-chocolate chips, but you can use your favorite kind.

Kristi adds 2 cups chocolate chips.

Stir.

Kristi stirs chocolate chips.

Grease your coffee mug. We recommend using a stick of butter for this.

Kristi greases a coffee mug with butter.

Add mixture to mug and spread evenly throughout.

Kristi adds mixture to mug.

Microwave at 50% power for 60 seconds. Rotate the mug and microwave at 70% power for 30 seconds. Finally, rotate again and microwave at 70% for 30 seconds. Allow 10 minutes to cool.

Add your favorite toppings. We chopped some pecans and added ice cream, whipped topping, chocolate sauce, and caramel sauce.

Hi, welcome to the Rada Cutlery Kitchen. My name is Kristi, and I like to bring you simple, easy recipes from the cookbooks we offer. This is a new one called Mug Shots Desserts, it’s all single serving desserts you make in a coffee mug. That way you don’t have to whip up a big batch of cookies or cakes, and you’re not tempted to eat as much because it’s one serving.

We’re going to just partially melt our butter so we’re going to put it in the microwave at 70% power for 20 seconds. We don’t want it to turn to liquid. So here the butter is partially melted, and we’re going to add our sugars and our vanilla. Then we’re going to stir this all together well. I have this little wire whip. At Rada we call it a Handi-Stir because it works great on gelatins and mixing items. Really great with scrambled eggs. Makes it nice and fluffy.

Now we’re going to stir in that egg yolk. Now we’re going to add flour and salt. We’re still going to keep mixing until it’s well-combined and thick. Once you have this well mixed we’re going to fold in 2 tablespoons of mini-chocolate chips. I used semi-sweet but you can use milk or dark, it’s up to your preference.

We’re going to bake this in a 16 ounce mug. We’re going to have to grease it first. I like to cut a stick of butter and run it around the inside of your mug. Now we’re going to spread our batter into that mug. We’re just going to drop that batter into the mug. You don’t have to smash it down, you can just spread it evenly in there. Once you have that nicely spread in your mug it’s time to microwave it. We’re going to do 3 different heat settings. First we’re going to do 50% power for 60 seconds.

Now we’re going to rotate the mug and do it at 70% power for 30 seconds. And one more time, we’re going to rotate the mug for another 30 seconds at 70% power. So now your brownie is done cooking. You don’t want to overcook it. It looks delicious. But you need to let it cool for 10 minutes.

While our brownie is cooling, I’m going to get some toppings ready to make it extra special. I have some pecans. I’m going to chop this up with a unique tool called the food chopper that Rada offers. It comes serrated or straight edged. You can use it to chop up nuts, celery, or onions. You can chop up food for little kids so the pieces aren’t so big. You can enjoy this, add up your toppings and eat it right out of the mug. But maybe you want to share it with a friend, so I’m going to put mine on a plate. I just took a paring knife and ran it around the edge.

It’s very fudgy, very delicious. Here I have it on a plate. I’m going to add a scoop of ice cream. I’m going to put a bit of whipped topping on that. Some caramel and chocolate sauce.
