Key Lime Tart Video Transcript:
Hi, Kristi at the Rada Kitchen, and today I’m making a recipe, it’s a key lime tart, and it’s one of the many desserts you can make with the Rada Quick Mix Key Lime Sweet Dip. It’s good as a dip, but it makes a lot of desserts too. So for the key lime tart, you’ll need 2/3 of a cup of sugar, ¼ of a cup of corn starch, a quarter teaspoon of salt, three egg yolks, three tablespoons of butter that has been softened, and two cups of warm milk. Now I went ahead and I made a pie crust. This is my made from scratch pie crust, and you can find it on another video. But you’ll want to do that, or you can use a pre-made pie crust. But you’ll want to bake that, and let it cool, and I made it in the Rada Pie Plate. So, let’s go over to the oven. We have to do the cooking over a double boiler.
So, on the stove top, get out your double boiler. If you don’t have one, you can make a homemade one. You just need a pan slightly smaller than your top pan. You put water in the bottom pan, and you want to simmer that. Because we’re cooking with milk, that prevents it from sticking to the bottom of the pan and getting scalded. So in the top of your double boiler, you’ll add the Sweet Dip Mix, the sugar, corn starch, and the salt. Just going to stir those together. And now I’m going to whisk in the warm milk, it was two cups of warm milk. I’m using the Rada Handy Stir. It easily mixes that up. And then we’re going to set that on top of that pan, and then we’re going to constantly whisk it until it thickens, the recipe said up to about 10 minutes. So now the mixture thickened, it’s been about 10 minutes. I’m going to slightly beat the three egg yolks. And I’m going to put about a fourth of a cup of this hot mixture into the egg yolks, and mix that in. And then gradually add it to the pan.
Stir the egg yolks into the hot mixture and cook it for five more minutes. After five minutes, add the three tablespoons of butter and stir it in until it’s melted.
So I let this mixture cool slightly, and I’m going to pour it into my cooled, baked pie crust. And then you’ll want to chill this for two hours before serving.
So the key lime tart has been chilling for about two hours, and I’m ready to cut it. I’m going to use the Super Parer Knife to make it into slices. And with this Rada Pie Server, it’s easy to get it out, and also if you don’t cut through that crust, you can use it. Now I’m going to make this a little bit more special, I took some sour cream and I thinned it a little bit with some milk. And in just a regular sandwich bag I’m going to put about a tablespoon. And then I’m going to take a scissors and cut the very end off. So to make this a little extra special, I’ll put a design on it. And then with a lime, and the Rada Vegetable Peeler, I’m just going to put little lime shavings on this black plate, it really stands out.
