1/3 cup of cilantro
1/4 cup fresh lime juice

1 cup of fresh tomato
3/4 cup of red pepper
1 tablespoon Chipotle seasoning
1/4 teaspoon salt

Ingredients

6 ears fresh sweet corn or 3 cups frozen, thawed
3/4 cup red onion, diced
1/3 cup cilantro, chopped
1/4 cup fresh lime juice
1 (4 oz.) can green chilies
1 cup fresh tomato, diced
3/4 cup red pepper, diced
1 teaspoon Chipolte seasoning powder
1/4 teaspoon salt

Instructions

Combine ingredients and mix well.
Refrigerate 4 hours or overnight before serving.
