Now is the perfect time of year to make a sweet, savory fresh-baked apple pie. And it’s the perfect time to make apple pie and freeze it for winter! In this post, you will learn how to make homemade apple pie, but also how to freeze apple pie and how to prepare it after it’s been frozen. This way you can have a delightful autumn treat in the middle of winter!
How to Make Homemade Apple Pie
Ingredients you will need:
- 5 C. peeled, thinly sliced apples (such as McIntosh)
- 1/4 t. salt
- 2 t. lemon juice
- 2 T. flour
- 1/2 C. sugar
- 1 t. ground cinnamon
- 1/4 C. brown sugar
- 1/4 t. ground nutmeg
Peel five cups of apples. Try the Rada Vegetable Peeler for this step. Then thinly slice them. We used a Utility Steak Knife. It’s like a paring knife but has a longer blade.
Add two tablespoons of lemon juice to keep your apples from browning.
In a separate bowl, add your dry ingredients and blend.
Then pour over the apples and stir until the apples are coated.
Now this is ready to bake. Put apple mixture into an unbaked pie shell, dotting with butter.
Then put the top crust on, brush with some milk, sprinkle with sugar, and put slits in.
Place in a 375 degree oven and bake for 40-55 minutes.

How to Freeze Your Apple Pie
If you’re planning to freeze your apple pie to save for the winter, you need to complete the previous steps just at little bit differently. Here’s what you need to do to freeze homemade apple pie:
Line a good, sturdy pie plate with foil, molding to its shape, and just put the apple filling in it.
Put this in the freezer open like this until it is frozen solid for four hours. Once frozen solid, wrap it up with more tin foil and store in a zip lock bag. You can store it in the freezer for up to a year.
How to Prepare Frozen Apple Pie
When your pie emerges from the freezer, follow these careful steps to make sure your pie will turn out like you made it fresh:
Put your stored apple pie mixture into an unbaked pie crust.
Pre-heat the oven to 375 degrees. While the filling is frozen, dot it with butter and then put on the top crust.
Once you have the edges sealed brush the top with milk, sprinkle with a little bit of sugar, and toss some cinnamon on if you’d like. Then cover with crust and be sure to cut slits!
Cover the filling with foil and bake it in your 375 degree oven for 30 minutes. Then uncover and bake for another 40-55 minutes or until the crust is brown and the filling is bubbly.

Hi, Kristy in the Rada kitchen and today I am sharing a recipe for apple pie. This is an apple pie you can make and bake the same day or you can put it in the freezer to bake later.
I got this recipe out of our Fresh to Freezer Cookbook. Everything from apples to zucchini. Anything out of your garden or you get at the farmer’s market. So, first to start out you need five cups of peeled and thinly sliced apples, any variety. Probably McIntosh works the best. I just got these off of a tree in my backyard. So I am going to use the vegetable peeler and take the peeling off. Now this is a double-sided peeler so whether you’re left handed or right-handed it will work for you. So once you get that apple peeled I’m going to use the utility steak knife. A lot of people use this as longer paring knife, it’s also good on steaks and meats. So now you’re going to thinly slice these.
After you peeled and thinly sliced five cups of apples add two tablespoons of lemon juice, this will keep them from turning brown. Then set that aside and then in a separate bowl we are going to add a half of a cup of sugar, a fourth of a cup of brown sugar, two tablespoons of flour, a fourth of a teaspoon of salt and a teaspoon of cinnamon and a fourth of a teaspoon of nutmeg and then blend those altogether. Pour this over the apples and stir until the apples are coated. Now this is ready to bake if you want, just put them in an unbaked pie shell, dot it with butter put the top crust on, brush it with a little milk, sprinkle it with a little sugar and make sure you put slits in it. But I want to show you how to freeze these for later use. Take a pie plate and line it with foil into the shape of the pie plate and just put the apple filling in it. If you want to make it fancy you can turn the top apples all the same direction. So now you have the filling already to the size of the pie plate. Put this in the freezer open like this until it is frozen solid, about four hours, I actually freeze mine overnight. Then once it is frozen solid, wrap it up good with more tin foil and put it in a zip lock bag. You can store it in the freezer for up to a year.
Now I am going to show you how to bake it after it has been frozen. So once the pie filling has been frozen for about four hours, I took it out of the pie plate, wrapped it in foil and put it in a freezer bag and now I am ready to bake it. I just took it out of the freezer. All you need to do it put it in an unbaked pie crust. You can make your own crust or use a store bought frozen pie crust. Pre-heat the oven to 375 degrees. While the filling is frozen, dot it with butter and then put on the top crust. I did make a video on how to make this pie crust, so check out our blog site, it’s also on YouTube, its called Homemade Pie Crust and then type in Rada. Go ahead and trim the edge if you need to just make sure that you seal the crust to the edge of the pan. I am using the Rada Stoneware Pie Plate, in my opinion it is the best! It is the only pie plate I use, makes that crust light and flaky, it just bakes it really even. Once you have the edges sealed brush the top with milk, sprinkle with a little bit of sugar, you could also put a little bit of cinnamon on the top if you want. Now the important thing is to cut slits. Now the filling is frozen so I am going to cover it with foil and I am going to bake it in a pre-heated 375 degree oven for 30 minutes and then I am going to uncover it and bake it another forty to fifty five minutes or until the crust is brown and the filling is bubbly. Hot fresh apple pie that we made from our apples that we picked this summer, baked it in the middle of winter because we froze them in the freezer. One of the recipes out of the Fresh to Freezer Cookbook.

What extra ingredients can I add to a canned store bought apple pie filling?
The ingredient question is hard to answer because each pie filling is different. I think a better angle for making a delicious apple pie spectacular would be to make sure your crust is delicious. If you following this blog post link you will find the directions for making a homemade pie crust – it is easier than you think! https://www.radacutlery.com/blog/homemade-pie-crust-recipe-directions/
I have made apple pie filling in the crust and froze the whole pie. When I baked the pie it has too much liquid in the pie – it is good but very soupy. When you freeze the apple pie filling by itself, like you were showing in the video, does it have a lot of juice from the apples in it? What can I do with the pie that I have froze that I know will be to soupy?
What I think happened is the filling did not get hot enough. In order for the juice to thicken it has “boil” in the pie. You want to bake the pie until the crust is golden brown AND the filling is bubbly. If you feel the crust is getting too brown, you may have to shield the edges with foil and reduce the oven temperature to 350 degrees. Also a “dessert” apple could be the culprit, Red Delicious and Gala apples will produce more juice than a “baking” apple like McIntosh or Granny Smith.
Rada, I have made and frozen my Apple Pie and plan to serve it in 2 days for a dinner party, how should I proceed, I have just taken it out of the freezer, where do I go from here? Should I thaw it first, before I bake it or not?
I’m not sure I’m doing this right,I hope I am correctly filling out all that is required.
Assuming that you froze only the filling and not with a crust; Preheat oven to 350 degrees; line a pie plate with 1 unbaked crust. Set unwrapped frozen fruit filling into crust; dot with butter. Top with remaining crust; seal and flute edges. Brush with milk and sprinkle with sugar. Cut vents in top. Set pie on a baking sheet to catch any spills. Cover with foil and bake for 30 minutes; uncover and bake 40 to 55 minutes longer. If necessary, shield edges with foil and reduce oven temperature to 350 near end of baking time and prevent overbrowning. Cool before cutting.
where do i find the fresh to freezer cookbook. I would like to print this recipe for future use but would be to many pages to print from here. need printable version
