How to Make Spinach Greek-Style Pizza

Ingredients you will need:

  • 1 lb. frozen bread dough, thawed
  • 1 lb. skinless chicken, chopped or ground
  • 1 cup seeded and chopped red or green bell pepper
  • 1 tsp. minced garlic
  • 1 (15 oz.) can Italian style tomato sauce
  • 1/2 tsp. oregano
  • 1 (10 oz.) package frozen chopped spinach, thawed and drained
  • 1 cup shredded reduced-fat, part-skim mozzarella cheese (or fat-free cheese)
  • 1/2 cup grated Parmesan cheese

Preheat oven to 375 degrees. Coat lightly a 12” pizza pan with a little olive oil to help browning and potential sticking.

Spread dough over pizza stone and prod with fork

Press the dough into the pan, forming a 1” crust around the edge. Prick the dough with a fork. Bake the dough for 10 minutes.

Cook chicken, onion, and other toppings

Meanwhile, in a medium skillet over medium high heat, cook the chicken, onion, bell pepper and garlic until the chicken is cooked through and no longer pink.

Stir in tomato sauce and oregano

Stir in the tomato sauce and oregano; set aside.

Sprinkle spinach over the top

Remove the crust from the oven; sprinkle drained spinach over top.

Sprinkle cheese and chicken mixture over top

Spread the chicken sauce mixture over the spinach. Sprinkle the mozzarella and Parmesan cheese over the sauce.

Spinach Greek Style Pizza finished

Bake for 25 minutes or until the crust is lightly browned and the cheese is bubbly. Remove the pizza from the oven and let sit for 2 to 3 minutes; cut into 8 slices.

Hi, Kristi at the Rada Kitchen. Today I’m making a recipe out of our 400 Calorie Dinners Cookbook. This has recipes for soups, casseroles, meatless dishes, seafood, poultry, side dishes. Today I’m going to make the Spinach Greek-Style Pizza. Now this cookbook has calories, proteins, fats, grams, explains all that. It also has a restaurant guide, some healthy choices at popular restaurants.

So the first thing we’re going to do is season our 12 inch pizza pan. I’m going to use the Rada Stoneware Pizza pan. You’ll take your bread dough and press it into your pan, about 12 inches. You want to leave about a one inch edge. Then you’ll want to poke it with a fork. Preheat your oven to 375, and put this in the oven for 10 minutes.

My crust is baking in the oven. While that’s baking, I’m going to make the vegetables and chicken. You’ll need one cup of onion. I’m using the Rada Cook’s Knife. This is chopped onions, so we don’t have to cut it real small. I’m going to take my red pepper that I’ve washed, and I’ll take out the seeds. I’ll take the Rada Utility Knife and cut that. Now I’ll add the pepper to my pan, and now we’ll chop our chicken. You want it kind of fine pieces. You could use ground chicken if you can find it, but I’m going to use our French Chef knife and chop it up.

I’m going to add the chicken to my pan with my onions and peppers. Now I’ll add a teaspoon of minced garlic and cook this over on the stove over medium high heat until the chicken gets well cut. Now the chicken is cooked, it’s no longer pink, and I’m going to add the Italian style tomato sauce. You don’t need to cook it any longer. Now a half teaspoon of oregano, and now we’ll take it over and make our pizza.

On my baked crust, we’re going to sprinkle the drained spinach and then we’re going to spread on our chicken mixture. Then we’re going to add our one cup of fat-free cheese or low-fat and our half cup of Parmesan cheese. You’ll bake this in the 375 degree oven for 25 minutes or until the cheese is melted and bubbly.
