Chocolate Cashew Macadamia Crunch Recipe
Ingredients you will need:
- 2 cups milk chocolate chips
- 3/4 cups coarsely chopped salted or unsalted cashews
- 3/4 cups coarsely chopped salted or unsalted macadamia nuts
- 1/2 cup butter
- 1/2 cup sugar
- 2 tablespoons light corn syrup
Coarsely chop 3/4 cups salted or unsalted cashews and 3/4 cups salted or unsalted macadamia nuts. The Rada Serrated Food Chopper is a simple tool that chops easily.
In a 9″ or 8″ square pan, line with foil and add 2 cups milk chocolate chips.
In a heavy skillet, add chopped cashews and macadamia nuts and 1/2 cup softened butter,.
Add 1/2 cup sugar.
Add 2 tablespoons corn syrup.
Cook over low heat, stirring constantly until butter and sugar is dissolved. Then increase heat to medium and continue to stir constantly until mixture begins to cling together and turn brown.
Pour mixture over chocolate chips in pan.
Spread over chocolate chips. Allow to cool completely.
Pull out tin foil and bang mixture on counter, cracking it into pieces. Serve and enjoy!

Hi, Kristy in the Rada kitchen, and I’m chopping up some cashews and macadamia nuts. I’m going to make a Chocolate Cashew Macadamia Nut Crunch. Perfect for the holidays and any time you’re craving chocolate and nuts.
Now, I’m just coarsely chopping ¾’s cup of salted or unsalted cashews. Then ¾’s cup of salted or unsalted macadamia nuts. And in a 9” square pan, actually this is the Rada 8 x 8”, it doesn’t matter, 8 or 9 inches will work, I lined this with foil and to that I’m going to add 2 cups of milk chocolate chips. Now we’re going to go to the stove and cook up some sugar and butter.
Now in a heavy skillet we’re going to combine our cashews and macadamia nuts, a half cup of softened butter, a half cup of sugar, and 2 tablespoons of corn syrup. Now we’re going to cook this over low heat, stirring constantly until butter and sugar is dissolved. Then we’re going to increase that heat to medium. We’re still going to stir it constantly until the mixture begins to cling together and turn brown.
So now you can see it wants to cling together and that’s what we want. Do it until golden brown. Now we’re going to pour this over our chocolate chips. Now you’ll want to let this cool completely so the chocolate on the bottom gets cool. Then we’re going to pull out the tin foil and bang it on the counter, which will crack it into pieces. Enjoy!
