Chunky Cheesecake Brownies Recipe

Ingredients you will need:

  • 8 oz. cream cheese, softened
  • 3/4 C. white sugar, divided
  • 3 eggs
  • 2 C. semisweet chocolate chips, divided
  • 1/4 C. butter
  • 2/3 C. all-purpose flour
  • 1/2 t. baking powder
  • 1/4 t. salt

Preheat oven to 350 degrees. Grease an 8″ x 8″ baking pan.  Mix cream cheese with white sugar and 1 egg. Beat until smooth.

Stir 1 cup chocolate chips into mixture and set aside.

Bring a pan of water to a boil.

Turn off heat and place a heat-proof mixing bowl over the water, forming a double broiler. Combine 1/4 cup butter and 1 cup chocolate chips.

Stir in 1/2 cup sugar and 2 eggs.

Kristi adds eggs to pan.

Sift together 2/3 cup flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.

Kristi adds sugar to bowl.

Stir into chocolate until evenly blended.

Kristi mixes chocolate and sugar.

Pour half the batter into the 8″ by 8″ baking pan.

Kristi pours chocolate into Rada Square Baker.

Spread the cream cheese mixture over the chocolate layer. Top the cream cheese mixture with the remaining chocolate.

Kristi uses the Rada Mixing Spatula to spread chocolate mixture.

Using a knife, swirl the chocolate and cream cheese together to form a marble pattern. Bake for 30 minutes.

Allow to cool and cut into 12 squares. Serve and enjoy!

Hi, Kristi in the Rada Kitchen, today I want to show you how to make delicious chunky cheesecake brownies.

First, preheat your oven to 350 degrees. Grease a square 8 or 9 inch baking pan. Mix an 8 ounce package of softened cream cheese with ¼ cup sugar and 1 egg in a mixing bowl. Beat until smooth. Stir 1 cup chocolate chips into the mixture and set aside. Fill a saucepan with water and bring it to a boil. Turn off heat and set a heat-proof mixing bowl over the water. In the mixing bowl, combine butter with 1 cup chocolate chips. Stir until melted and blended together.

Stir in a half cup sugar and 2 eggs. Sift together 2/3 cup flour, half a teaspoon baking powder, and ¼ teaspoon of salt. Stir into chocolate until evenly blended. Pour half of the batter into the square baking pan. Spread the cream cheese mixture over the chocolate layer. Top with remaining chocolate mixture. Using a knife, swirl the chocolate layer into the cream cheese to make a marble pattern. Bake for 25 to 30 minutes. Allow to cool, cut into 12 squares, store in refrigerator or freeze.
