Everyone loves macaroni and cheese, as it’s great as a side or a meal, and there’s no shortage of things you can add to it. With our Buffalo Mac & Cheese, we just may have found the world’s best way to have macaroni and cheese. This rich, cheesy dish combines several simple ingredients for a dish that’s to die for, whether it’s a supporting dish or the star attraction!

Buffalo Mac & Cheese Recipe

Ingredients you will need:

  • 1 package Rada Buffalo Chicken Dip Quick Mix
  • 8 oz. package cream cheese (softened)
  • 1/2 cup ranch dressing
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 can diced tomatoes with chilies (drained)
  • 1 cup shredded Cheddar Jack cheese
  • 8 oz. elbow macaroni
  • 1/2 cup bread crumbs
  • 2 tablespoons butter

Cook 8 ounces macaroni on stove according to package directions. Meanwhile, put another saucepan on medium heat. Add 8 ounce package softened cream cheese to saucepan.

Add 1/2 cup ranch dressing.

Add 1 can (10 ounces) tomatoes with chilies.

Add 1 can of cream of mushroom soup.

Add 1 cup shredded Cheddar Jack cheese.

Add 1 package Rada Buffalo Chicken Dip Quick Mix.

Stir until contents are melted and evenly distributed.

When macaroni is cooked, pour into the same saucepan as the mixture.

Combine 1/2 cup bread crumbs with 2 tablespoons melted butter. Stir.

Buffalo Mac & Cheese Video Transcript

Hi, Kristy in the Rada kitchen, and today I’m making Buffalo Mac and Cheese. This uses our Rada Quick Mix Buffalo Chicken Dip. If you like buffalo chicken wings, you’ll love this dip, and you’ll love the Mac and Cheese even more. And it’s just some simple ingredients that you make on the stove, and it takes about 30 minutes. What you need is a can of cream of mushroom soup, a half cup of ranch dressing, a can of tomatoes with diced green chilies, half a cup of milk, a cup of cheddar jack cheese, 8 ounces of uncooked macaroni, and a softened 8 ounce package of cream cheese.

So I have my macaroni cooking on the stove, then we’re going to go mix these ingredients in a pan. We’re going to add bread crumb and butter topping, so lets get started.

So while your macaroni is cooking according to the package directions, in another saucepan you add the softened cream cheese and the milk, ranch dressing, tomatoes with chilies, the can of cream of mushroom soup, the cup of cheese, and then the Rada Buffalo Chicken Dip Quick Mix. We’re just going to heat this at about medium until all this blends together and is evenly distributed.

So this is all melted together so we’re going to add our cooked macaroni. I’m using non-scratch pans, and Rada has these wonderful non-stick utensils that won’t scratch your nice pans. They have spatulas, spoons, and a soup ladle. They’re also available as a fundraising option. You can sell them and make a 40% profit for your club or team. Now we’re going to pour this into out 8 by 8 bake dish. This is the Rada stoneware, also available as a fundraising opportunity. They don’t need to be pre-seasonsed. We’re going to place this in a 350 degree oven for 30 minutes. We’re going to combine our melted butter and bread crumbs, sprinkle that on the top, and then leave it in for another 10.

So our Buffalo Mac and Cheese has been in the oven for 30 minutes. Now I’m going to add these 2 tablespoons of melted butter to a fourth cup of bread crumbs. And we’re just going to sprinkle that over the top to give it that crusty topping. Then we’re going to put this back in the oven for 10 minutes.
