Types of Quick Breads

We all think of quick bread in a loaf shape. But some people consider baked goods like muffins and coffee cake to be quick breads too simply because no yeast is involved. Feel free to form your own opinion on that topic.

Look for these basic ingredients in most quick bread recipes:

  • flour to create structure
  • quick-acting leavening ingredients to make them rise
  • salt for flavor
  • fat to make them tender
  • liquid to activate leaveners
  • egg to create color and add texture
  • sugar for sweetness and browning

Tips for Making Quick Bread

  1. Use the same size pan called for in the recipe OR increase/decrease baking time.
  2. Grease the bottom of your pan thoroughly. Then line with parchment paper if you’d like, letting two ends hang over the edges of the pan; this allows you to pull up on the ends of the paper to lift the baked bread out of the pan.
  3. Only fill the pan about ⅔ full to ensure proper rising and even baking and to prevent the batter from oozing over the sides.
  4. Cool in the pan for 15 to 20 minutes.
  5. Run a knife around the edges of the pan and tip out onto a cooling rack to cool completely.

We incorporated maraschino cherries and toasted walnuts into our recipe, both of which taste great in banana bread!

Banana Quick Bread With Toasted Walnuts

INGREDIENTS (makes 1 loaf)

½ C. butter, softened
1 C. sugar
2 eggs
2 C. flour
1 tsp. baking soda
¾ to 1 C. mashed ripe banana
⅓ C. chopped maraschino cherries
⅓ C. toasted chopped walnuts or pecans*
¾ C. sifted powdered sugar
1 tsp. cherry flavoring
Milk

DIRECTIONS

Preheat your oven to 350 degrees and generously grease a 5×9″ loaf pan; set aside.

For the bread, in a mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each.

In a separate bowl, sift together the flour and baking soda. Add to the butter mixture alternately with the banana, beating until just incorporated. Stir in the cherries and nuts and pour into the prepped loaf pan. Bake 55 to 60 minutes or until done. Set the pan on a cooling rack for 10 minutes, then remove the bread from the pan.

For the icing, mix the powdered sugar, cherry flavoring, and enough milk to make a drizzling consistency. Drizzle over warm or cool bread; cool before slicing.

How to Toast Nuts

*To toast walnuts or pecans for this recipe, place nuts in a single layer in a dry skillet over medium heat, stirring occasionally, or on a baking sheet in a 350 degree oven for about 10 minutes or until golden brown.
