Breakfast for Dinner? Maybe Not.

We think the best April Fools’ Day pranks revolve around food (but we think the best thing on just about ANY day revolves around food).

So if you are a fan of a good “All Fools’ Day” prank that doesn’t hurt or embarrass anyone and your goal is simply to make them laugh, take a look at the recipes below.

“Cereal” for Dinner. Who doesn’t like breakfast for dinner now and then?! But this cereal imposter is really cauliflower soup with seasoned oat cereal “croutons.” Not a fan of cauliflower? No problem. You can substitute that vegetable for potatoes.

“Cereal in Milk”

INGREDIENTS (Serves 2)

3 T. butter, divided
1 C. toasted oat cereal
¼ tsp. garlic salt
¼ tsp. onion powder
White onion
Fresh cauliflower*
1¾ C. milk
Salt and white pepper to taste

DIRECTIONS

In a medium skillet over medium heat, melt 2 tablespoons butter. Add cereal and stir to coat (Rada has a great non-scratch spoon, perfect for this). Sprinkle with garlic salt and onion powder and cook until warmed and slightly browned, stirring constantly. Let cool completely.

To create the “milk,” melt the remaining 1 tablespoon butter in a medium saucepan over medium heat. Mince the onion with a until you have about ¼ cup or to taste (use a knife like our Cook’s Knife to make it easy). Put the onion in the melted butter and sauté for a couple of minutes until slightly tender but not browned, stirring constantly. Meanwhile, using the same knife, chop the cauliflower to measure 3 cups. Stir the cauliflower and milk into the saucepan with the onion. Bring to a simmer and cook for 10 to 15 minutes, until cauliflower is very tender. Season with salt and white pepper. Cool slightly.

Pour cauliflower mixture into a blender or food processor and puree until smooth. Divide the puree between two serving bowls. Sprinkle each with half the seasoned cereal. Serve warm.

*Replace cauliflower with 2 peeled & diced white potatoes if you’d like.
