Tuscan Bread Salad Recipe

Ingredients you will need:

  • 10 ripe plum tomatoes, cut into 1″ chunks
  • 2 cucumbers, peeled and cut into 1″ chunks
  • 1/2 red or white onion, cut into 1/2″ chunks
  • 1 (5 ounce) package seasoned croutons
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Cut 10 ripe plum tomatoes into 1″ chunks. The Rada Tomato Slicer cuts tomatoes like no other knife.

In a large bowl, combine vegetables and 1 (5 ounce) package seasoned croutons.

Hi, Kristy in the Rada kitchen, today I’m making a recipe for Tuscan Bread Salad. This was submitted to me by one of our employees. It’s really good, really easy, and healthy! First you need 10 plum tomatoes. We’re going to slice these into 1” slices. We’re going to use this ever-popular Rada Tomato Slicer.

If you don’t have a tomato slicer you are really missing out. These scalloped edges of the teeth cut right through the skin. You can cut them thick, you can cut them thin, this is just the best tomato slicer.

You can place those tomatoes in a large bowl. This is the Rada Cutting Board, it’s nice because you can funnel the ingredients into your dishes. Next you need 2 cucumbers. You want to peel those. This is the Rada Vegetable Peeler. Very sharp, it can be used by left and right-handed users. It goes back and forth. We also have the Deluxe Vegetable Peeler, it has a bigger handle and longer blade. Again, it can be used by left and right-handed users. It even works great to remove kernels from an ear of corn. Now we’re going to go in and cut that into 1” chunks also.

Then you need a half an onion sliced thin. We’re going to cut the onion into half inch chunks. Add a 5 ounce package of seasoned croutons. In the old days this is how Tuscans used stale bread. We’re going to use seasoned croutons. I’m just going to gently toss that. Then I will go and make my dressing.

Now, for our dressing we’re going to mix it up in a small bowl. We’re going to take a half cup olive oil, a fourth cup of balsamic vinegar, a half a teaspoon of sugar, and a fourth teaspoon of salt and pepper. Then I’ll whisk that up with this Rada Handi-stir. It’s great with dressings, puddings, gelatin, scrambled eggs, pancakes. Now we’re going to pour this over our vegetables and bread. Toss it. This is a salad you’ll want to serve immediately so the croutons don’t get soggy.
