Hi, Kristy at the Rada Kitchen and today I would like to share a tortilla wrap recipe with you. This uses our Chili con Queso Dip Quick Mix and to this dip you’ll need 8 ounces of cream cheese and 8 ounces of sour cream or you can use mayonnaise, like I am going to use today. You’ll need some leaf lettuce; you’ll need a pound and half of thinly sliced meats. I am going to use turkey, ham and beef. You’ll need 6 large tortillas, a bunch of green onions and twelve slices of cheese, your choice you could use pepper jack and Colby/jack and you’ll need 2 large tomatoes.

First I am going to mix up our chili con queso mix. I already have the mayonnaise and cream cheese in my bowl. I’m going to use the Rada Handi-stir to mix this up. Now if you do use mayonnaise like I am, you’ll want to omit the ¼ cup water. Otherwise with sour cream you should add a ¼ cup water. So once you have that mixed together, set it aside.

Now I am going to slice my tomatoes with the Rada Tomato Slicer. First I’ll remove the stem. This tomato slicer has been a big hit for us. It’s our second best seller. It easily cuts through the skin. You do want to slice these tomatoes really thin which is no problem.

And now you’ll want to slice up the bunch of green onions with the whites removed. So with the Super Parer we’ll easily do that. And you’ll slice them in half. I’m just going to take them and go like this. I’m just going to cut them into long strips.

Now we’re ready to assemble our tortilla wraps. Take a large tortilla; spread the chipotle mixture on the bottom. I’m using the Rada Super Spreader, this is a great spreader for mayonnaise and peanut butter. It’s long enough to get to the bottom of the jar. It’s good to frost cakes too. Now add lettuce, tomato slices, onion, a few slices of cheese and the meat. Now roll this up really tight and I like to put a toothpick in it to hold it together and then slice it in half. It’s a really pretty little sandwich, take it on picnics, have it for a super bowl party or a brunch.

That’s one of the recipes using our Chipotle Quick Mix Dip. You can find this recipe and more at our website at www.RadaQuickMixRecipes.com.

Hi, Kristi at the Rada kitchen and today I’m making a recipe out of our tortillas cookbook. It’s 101 recipes that use tortillas, everything from breakfast, to entrées, to delicious desserts. Today I’m going to make Mexican cookies.   For this recipe you need 4 6-inch tortillas, 1/4 cup powdered/confectioner’s sugar,  3/4 teaspoon of shortening, 1/2 cup semi-sweet chocolate chips, and 1/4 teaspoon ground cinnamon.

The first thing you need to do is cut the tortilla into 8 slices. I’m going to slice it with the Rada pizza cutter. Then you’re going to put them on a baking sheet. I’m going to use the Rada cookie sheet. You’ll want to preheat your oven to 400 degrees (fahrenheit). I’m going to put these in for 10 minutes or until they turn brown.   While my tortillas are in the oven, I’m going to take the chocolate chips and the shortening and I’m going to heat this in the microwave until it’s melted. I will stir it occasionally. I put it in for 30 seconds, stirred it, put it in for another 30 seconds, and stirred it again.

You’re going to set that aside. In a sealable bag we’re going to mix the powdered sugar, which was 1/4 cup. Then a 1/4 teaspoon of cinnamon and mix that up. Now my tortilla chips are nice and brown and crisp, and we’re going to put a few at a time into our bag of powdered sugar and cinnamon and shake them around.   Then you’ll want to put them on a pan, on top of wax paper or parchment paper. Now You’ll drizzle the chocolate that you melted in the microwave. You can eat them now or put them in the refrigerator.
