Strawberry Shortcake in a Mug Recipe
Ingredients you will need:
- 2 t. butter
- 2 t. sugar
- 1/4 C. flour
- 1/4 t. baking powder
- 2 t. well-beaten egg or egg substitute
- 1 t. milk
- Sliced strawberries
- Whipped topping
Place butter in a mug and heat at 40% power for 30 seconds. Swirl the mug to coat with butter. Add sugar and stir.
Add flour, baking powder, and egg.
Whisk until smooth and creamy.
Cover tightly with plastic wrap, leaving a small section unsealed to vent. Microwave on high for 60 seconds or cake tests done with a toothpick.
Uncover and allow to cool. Invert mug and allow cake to cool. Top with strawberries and whipped topping.
Serve and enjoy!

Hi, Kristi in the Rada Kitchen, today I’m going to show you how to make a strawberry shortcake in a mug. This is a recipe from out Mug Shots Desserts cookbook. It features homemade microwave desserts in minutes.
Put 2 tablespoons of butter in an ungreased mug and microwave at 40% power until melted. Swirl the mug to coat the sides with butter. Add 2 tablespoons of sugar and stir. Add ¼ cup of flour, ¼ teaspoon of baking powder, 2 tablespoons of a well-beaten egg, and 1 tablespoon of milk. Whisk until creamy.
Cover lightly with plastic wrap, leaving a small section unsealed to vent. Microwave on high for 60 seconds or until a cake tests done with a toothpick. Uncover and let cool. Invert mug to remove warm cake. Top with sliced berries and whipped topping.
