The air is getting cooler and the crops in the fields are brittle in the wind. It’s harvest time! Enjoy this scrumptious Harvest Bake made with apples and squash. This recipe comes from Rada Cutlery’s 101 Recipes with Apples cookbook. It’s a great Thanksgiving recipe, but it’s also great for any chilly fall or winter evening.

How to Make Apple and Squash Bake Recipe

Ingredients you will need:

  • 1 butternut squash, peeled
  • 1/4 C. butter, melted
  • 2 apples, any variety
  • 1/2 tsp. salt
  • 1/2 C. brown sugar
  • 1 T. flour

How to Peel Squash

Preheat your oven to 350 degrees. Peel your butternut squash with the Rada Deluxe Vegetable Peeler (this is the best tool to use when peeling hard veggies and fruits).

How to Peel & Seed a Butternut Squash

Remove the seeds. The Rada Cook’s Spoon works well for digging into those seeds.

Cut squash and put in pan

Then cut into 3/4 inch slices. The Rada Stubby Butcher Knife is a great tool for this task. Layer the squash in the bottom of a 9×13 inch pan. Make sure to grease, 

Core apples and slice into wedges

Core two apples. Then slice into wedges.

Place apples over the squash

Place over the squash.

Mix other ingredients for your squash bake

In a separate bowl, mix your brown sugar, flour, and salt. To that, add a 1/4 cup of melted butter.

Spoon mixture over Thanksgiving bake

Spoon the mixture evenly over the apples. Then bake in a 350 degree oven for 50-60 minutes or until tender.

  • 2 apples, any variety, thinly sliced
  • 1/2 tsp. salt
  • 1/2 C. brown sugar
  • 1 T. flour

Instructions

  • Cut squash into 3/4 inch slices. Layer the squash in the bottom of a greased 9×13 inch pan. 
  • Place apples over the squash
  • In a separate bowl, mix brown sugar, flour, and salt. Mix and add melted butter.
  • Spoon the mixture evenly over the apples. Bake uncovered in a 350 degree oven for 50-60 minutes or until tender.

Hi, Kristi in the Rada Kitchen. Today I’m making Fall Harvest Bake, one of the recipes out of our 101 Recipes with Apples. As you can see, I’ve got a lot of apples I’ve picked off the tree in my backyard. So I’m going to use two of those in this recipe and butternut squash.

The first thing you need to do is peel the butternut squash. I’m going to use the Rada Deluxe Vegetable Peeler. This peeler is really good on large fruits and vegetables like squash, it works good to take the kernels off of sweet corn, you can peel cantaloupe with it. So once you have the squash peeled, we’re going to cut it into three quarter inch slices. We’re going to get all the seeds out. Then you’ll slice it into three quarter inch slices.

Now I sliced this up with the Rada Stubby Butcher. It’s a nice, easy knife to handle but it’s really sturdy to cut through tough vegetables like the squash. So now we’re going to layer the squash in the bottom of a 9×13 pan. I’m using the Rada Stoneware pan, so I don’t have to grease that. If you’re using a regular pan, you’ll want to grease it up. Once you have the squash in your pan, you’ll need two apples and we’ll core them. Again, I’m still using that Stubby Butcher knife. The blade’s not too long so it’s still easy to cut out the core of an apple.

You’ll slice the apple into wedges. Then you place the apple wedges over the squash. You can use any kind of apple. This was a Macintosh. It was growing outside on my tree. Now we’ll set that aside because we have a mix we’ll put over the top of it. Now in a separate bowl, you’ll want to mix half a cup of brown sugar, a tablespoon of flour, a half teaspoon of salt and mix that together. This is the Cook Spoon, it’s the same spoon I used to get the seeds out of the squash. It’s also a good spoon to get seeds out of pumpkins and to stir with on the stove. To that, we’re going to add a fourth cup of melted butter.

So with this mixture, I’m going to spoon it evenly over the apples. Now we’ll put this in a preheated 350 degree oven for 50-60 minutes or until it’s tender.
