Wood-Smoked Cherry Pie Recipe


Ingredients you will need:

  • Pie crust
  • Cherries
  • Sugar
  • Cinnamon
  • Ginger
  • Cornstarch

Place 2 1/2 lbs. cherries in a strainer and press down.

Dan Fitzgerald drains cherries.

Strain out all of the juice. Save the juice for later if you like.

Cherry juice is drained.

Add 1 cup sugar to cherries.

Dan adds flour to cherries.

Add 2 heaping spoonfuls of cornstarch to cherries.

Dan adds cornstarch to mixture.

Add 1/2 teaspoon cinnamon and 1/2 teaspoon ginger to cherries.

Dan adds cinnamon to mixture.

If you are using a homemade crust, roll it out.

Dan uses a rolling pin to flatten pie crust dough.

Place the crust in your pie pan. Poke holes in with a fork to prevent the filling from bubbling over while cooking.

Place cherry filling into the pie pan.

Dan places cherries into pie crust.

Make an egg wash with an egg. Brush the crust and filling.

Dan brushes pie with egg wash.

Roll out more dough and cut it into strips. Brush with egg wash.

Dan spreads egg wash over crust.

Lay the strips across the pie filling.

Dan adds dough lattices to pie.

Remove the edges.

Dan cuts edge off of pie crust.

Brush with egg wash again.

Dan coats crust with egg wash.

Prepare your smoker.

Dan adds wood chips to his trusty smoker.

Place the pie inside. Allow time to cook until crust is golden brown.

Dan places cherry pie in smoker.

Allow time to cool once cooked. Serve and enjoy!

Well, I’ve got a treat for me, Guy, and hopefully you, too. What we’ve got is Michigan tart cherry smoked pie. That’s a lot to swallow. I’m excited about this, man! Here’s what we’ve got for ingredients. We’ve got cinnamon, we’ve got ginger, corn starch, and, naturally, Pioneer Sugar, which is one of our partners. This is the sugar right here. We’ve got out homemade dough, our cutting board, and we’re ready to rock, man. I’ll get my cherries out and show you how we do it.

Our good friend Brad at Nature Blessed provides the best cherries you’re ever going to have. We’re going to strain these through a colander. Put the cherries in here. I just press them down, get all the juice out of them. These cherries are absolutely awesome. They’re available at many, many stores, but you can go on the website and see where you can get them. Get that juice out of there. We’re going to drink this juice. We love Pioneer Sugar. For anything that you do that requires sugar, this is the way to go. I like to put a full cup of sugar in my cherry pie, because these are very tart cherries. There we go.

We’ve got 2 tablespoons, heaping, of corn starch. Now add cinnamon, about half a teaspoon. Ginger, the same, about half a teaspoon. You can measure if you want to, I’ve done it enough times that I can get an eyeball on this. Now get the filling all blended in good. I’ve been waiting for Guy to get here, so this dough is starting to get stiff, but that’s OK. You don’t want to roll it real hard or tight. Now look what we’ve got here, the Rada Pie Stone. This is the way to make a pie, right here. Some people fold this in half and take it back over, we’re not doing any of that. See these little cracks in the dough? That’s fine. It keeps the filling from bubbling up from the bottom. We’ll also make some holes with a fork. You don’t want the pie to bubble up and explode, make a volcano in your oven.

Here we go. This is the moment of truth man, the pie filling makes the pie. There’s a couple of calories in there. When you do what we do every day, you can eat whatever you want for calories. Never trust a skinny chef!

Now we have 1 farm fresh egg. When I say “farm fresh,” I get them from a hen box. Mix the egg with a whisk or a fork. We use a fork. This is how we do it. Now get your brush and brush all the edges before putting another part of your crust on here. We’re going to do lattice strips on this thing. You want to get egg wash all over the crust. Set this aside for a second. Get this piece of dough and roll it just a little more. Now we have a Rada Pizza Cutter, and that’s how we’re going to make oru lattice. You’ll want to make them a half inch, that’s usually pretty good. You don’t want to get a ruler, you don’t want to get ulcers trying to make a pie. Your pie-making should be fun.

Again, you want to make sure everything has egg, because you want it to be glued. You want to go ahead and do these now. We’ve got flour on these, we use real flour. We grind our own flour. Try to get about a half inch on the pie. When you start going down the other side, we can come back and cut these off later. Wait until you taste this, man.

Now we’re going to use a Rada knife to cut our lattice off. The knife is so sharp it will slice molecules. All you have to do is put a little pressure on there and just push down and you’re cutting. A sharp knife is so, so important to us, the way we do things. Now we’ve got to do a little more egg wash. It is very important that you use egg wash on these pies. It gives it a nice, dark color and holds everything together. It also binds with and combines with the sugar. I’m telling you, man, I am excited. Again, Pioneer Sugar. No certain amount, just make sure you cover everything so that you get a good crop.

We’ve got the smoker already cranking. Let’s take it out and put it on the smoker. You see that? It’s not only smoked, it’s apple-smoked Michigan tart cherry pie. Apple and cherry together. Love these pellet smokers. We can put that on there, go away, and come back in 1 hour and it’ll be perfect. I am so anxious and impatient that we’re not going to wait for this to get done, we’re going to eat the one we cooked this morning.

This one was started at 5 this morning, and it’s pretty firm. You have not had anything this awesome. We’re using the Rada Pie Server to cut across like this.
