Shrimp on Toasted Bread Recipe

Ingredients you will need:

  • 1 French baguette, sliced into 1/4 – 3/8″ slices
  • 1/4 lb. unsalted butter
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons season salt
  • 2 teaspoons minced garlic
  • 4 teaspoons sugar
  • 1 teaspoon Italian seasoning
  • Whipped cream cheese
  • Cocktail sauce (homemade or store bought)
  • Small shrimp, cooked, peeled, and de-tailed

Preheat oven to 400 degrees. Slice 1 French baguette into 1/4 – 3/8″ slices.

In a pan, melt 1/4 lb. unsalted butter, 2 teaspoons minced garlic, 3 tablespoons extra virgin olive oil, 1 tablespoon Italian seasoning, 2 tablespoons season salt, 4 teaspoons sugar. Remove from heat when melted.

Brush mixture evenly over top of bread slices. Place on baking sheet and put in oven until golden brown.

If you want to make your own cocktail sauce, combine ketchup, minced garlic, season salt, horseradish, and Worcester sauce. Mix.

When bread is golden brown, remove from heat. Place a layer of whipped cream cheese on the top of each piece of bread. Top that with a layer of cocktail sauce.

Shrimp on Toasted Bread Video Transcript

Hi, I’m Chef Ted, and I’m here today in the Rada Cutlery kitchen. Today I’m going be doing a real simple, easy appetizer, it’s a shrimp cocktail on a crostini.

I’m going to take a Rada 6” Bread Knife and cut up a baguette. I cut it a little at an angle so that the slices are about 3/8 to ¼” wide. Now I’m going to make the mixture that will go over the top of the baguette I’ve sliced up. And I’m going to start with a stick of butter, 2 teaspoons of minced garlic, 3 tablespoons extra virgin olive oil, a tablespoon of Italian seasoning, which is just oregano, basil, and a few other spices. I’m going to use some season salt, though you could use regular salt and pepper with a little onion and garlic thrown in.

We add about 1/8 cup of sugar or so. It helps the crostini brown a little faster, adds some caramelization on them. Now we’re going to head back over to the table.

I’m going to take that mixture and I’m just going to brush it evenly over the top of the sliced bread. Put it on one of the Rada Stoneware Cookie Sheets. Now I’m going to take these and put them in a pre-heated 400 degree oven until they’re really crunchy, crisp, and golden brown.

Now I’m going to make a cocktail sauce, a quick, easy one. Basically I’m using a little ketchup, a little minced garlic, a little season salt. Then I’m going to put in a little bit of some real fine, real hot horseradish. A dash of Worcester sauce. If you like you can buy a prepared cocktail sauce, you don’t have to make it from scratch.

Alright, we’ve got the crostinis out of the oven. They are golden brown, really crusty, they way they’re supposed to be. All I do is take some whipped cream cheese and using the Rada Party Spreader I put some on. Get a pretty good coverage on the crostini. Take a little of the cocktail sauce we made and put that on. Take small shrimp that you can buy pre-cooked with all the tails and shells off. And that’s all there is to it. Shrimp Cocktail Crostini.
