Hi, Kristy in the Rada Kitchen and I’m chopping up some pepperoni. I’m going to make a recipe called pizza puffs. It’s a good recipe. It’s out of our “Party Snacks to Share” recipe book. It’d be a great appetizer for a super bowl party or any kind of party.
What I like about this little Cook’s Utility knife is that the tip of it slices really easy. And then when you want to go to chop, you can use the wider blade to chop up that pepperoni. After you’ve chopped the pepperoni, set it aside and preheat your oven to 375.
Spray a mini muffin cups with nonstick cooking spray. In a large bowl we are going to add ¾ cup flour, ¾ teaspoon of baking powder and a tablespoon of Italian seasoning. We’re going to mix that together. Now to this we’re going to whisk in a beaten egg and ¾ cup of milk and I’m going to whisk that in with the Rada Handi-Stir. It is one tool I would not live without. It works great on eggs and puddings and gravys.
And now we’re going to stir in our chopped pepperoni; that was 3 ounces of pepperoni slices that we chopped. And then we’re going to add a cup of shredded Italian cheese blend and ¼ of cup grated Romano cheese. Then you’ll just stir that in and now what we’re going to do is just let that sit for 15 minutes.
So after 15 minutes we’re going to stir this again and now we’re going to drop it into our mini muffin pan. We’re going to put these in the oven for 20-25 minutes or until golden.
Crispy, cheesy pizza puffs, serve them with warm pizza sauce for a super bowl party, slumber party or any occasion you need a quick tasty appetizer. This is one of the recipes in our “Party Snacks to Share” recipe book.
