Oriental Chicken Salad Recipe 

Ingredients you will need:

  • 4 1/2 T. rice vinegar
  • 4 1/2 T. sugar
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 3/4 C. plus 3 T. vegetable oil
  • 2 (3 oz.) pkgs. ramen noodles, any flavor
  • 1 (2 oz.) pkg. slivered almonds
  • 1 chicken breast, grilled, shredded & cooled
  • 1 head cabbage, chopped
  • 1/4 C. sunflower nuts
  • 2 green onions, sliced
  • 2 tomatoes, seeded & chopped

In a small bowl, mix 4 1/2 tablespoons of sugar, 2 teaspoons of salt, a teaspoon of black pepper, and 3/4 cup vegetable oil. Set in refrigerator.

Heat 3 tablespoons vegetable oil in a skillet.

Kristy adds oil to skillet.

Crush 2 packages ramen noodles and place in hot oil.

Kristy adds ramen to hot oil.

Add 2 packages slivered almonds to hot oil.

Kristy adds slivered almonds to oil and ramen.

Heat and stir until contents are lightly browned. Remove from heat.

Kristy removes pan from heat.

Chop 1 head cabbage.

Kristy chops cabbage.

Add to large mixing bowl.

Kristy adds cabbage to mixing bowl.

Slice 2 green onions.

Kristy chops onions.

Add sliced green onions to mixing bowl.

Kristy adds onions to mixing bowl.

Slice and seed 2 tomatoes.

Kristy slices tomatoes.

Place tomatoes in mixing bowl.

Kristy adds tomatoes to bowl.

Add 1 grilled, shredded, and cooled chicken breast to bowl.

Kristy adds grilled chicken to salad.

Add 1/4 cup sunflower nuts.

Kristy adds seeds to salad.

Toss.

Kristy mixes the salad ingredients.

Add toasted noodle mixture to bowl.

Kristy adds toasted ramen to salad.

Toss.

Kristy mixes the chicken salad.

Remove dressing from refrigerator and add to bowl.

Toss.

Hi, it’s Kristy in the Rada Cutlery kitchen. Today I’m introducing a new cookbook titled Ramen Noodle Genius. It has over 50 recipes that use ramen noodles. Today I’m going to make Oriental Chicken Salad.

In a small bowl I have 4.5 tablespoons of rice vinegar. To that I’m going to add 4.5 tablespoons of sugar, 2 teaspoons of salt, a teaspoon of black pepper, and 3/4’s cup vegetable oil. I’m just going to whisk that together. This is really easy with the Rada Handi-Stir, the best whisk you can buy. It’s a great fundraiser, too, if you have a group or team that wants to make a 40% profit, they practically sell themselves. Once people know you’re selling them, they’ll probably even ask you about them. Alright, so we’re going to put this in the refrigerator and then toast up our ramen noodles.

In a skillet we’re going to heat up 3 tablespoons of that oil. Then you’ll need 2 packages of ramen noodles, any flavor because we’re not going to use the flavor packets. You can save those for another recipe. Now we’re just going to crush the noodles and add them to the hot oil. Then we’re going to add a 2 ounce package of slivered almonds. You just want them lightly browned. So just remove it from the heat and let it cool. Now we’ll go cut up our vegetables.

You’ll need to shred a head of cabbage. We’re going to take this Rada French Chef knife, you can get nice, thin slices. Go across, chop it. Then with your cutting board you can pour it into your bowl. And then you’ll need 2 green onions. You need 2 tomatoes. We’re going to seed these. How I do that is squeeze it to get all those seeds out the middle. This is the famous Rada Tomato Slicer. If you don’t have one of these, you need to get one. It has a nice serrated edge that cuts right through that skin. It’s great for left and right handed users. We’ll add those to our salad.

And then here I have one chicken breast that was grilled and shredded. You want to make sure it’s cool, also. Then we’re going to add ¼ cup sunflower nuts. Now we’re going to add our noodle mixture. We’ll pour our dressing we made over the top. All you have to do is toss it. And your delicious Oriental Chicken Salad is ready to serve. It makes about 12 cups. There’s nothing like toasted ramen noodles to make a salad extra special.
