Sweet & Salty Nutella-Stuffed Cookies

Ingredients you will need:

Nutella Cookie Ingredients

  • ½ C. Nutella hazelnut spread
  • ¾ C. plus 2 T. butter, softened
  • 1 ¾ C. sugar, divided
  • 2 eggs
  • 2 ½ C. flour
  • 2 t. vanilla extract
  • ½ t. salt
  • 1 T. sea salt

Line a baking sheet with parchment paper. Using a 1 teaspoon measuring spoon, place Nutella in small mounds on prepared baking sheet. Place in the freezer for 15 minutes.

Lump Nutella onto the baking sheet.

Place ¼ cup sugar in a small bowl. In a medium bowl, whisk together flour, baking powder and salt. Line two additional baking sheets with parchment paper. Set all aside.

Whisk together sugar and dry ingredients.

Preheat oven to 350. In a large mixing bowl, beat together butter and remaining 1 ½ cups sugar on medium speed until light and fluffy. Beat in eggs, one at a time. Add vanilla and beat to combine. Reduce speed to low and gradually beat in flour mixture until just combined.

Slightly flatten 1 tablespoon dough and sprinkle with a bit of sea salt.

Flatten one tablespoon of dough on the sheet.

Set on Nutella mound on top. Cover with 1 tablespoon dough, sealing edges. Roll into a ball and roll in set-aside sugar.

Set Nutella mound on top and add another flat piece of dough.

Repeat with remaining dough and Nutella. Arrange on prepared baking sheets. Bake for 12 to 15 minutes or until edges are set.

Roll into balls and repeat.

Set pan on wire racks for 10 minutes; then transfer cookies to racks.

Hi, Kristi at the Rada Kitchen, today I am going to be making a recipe out of our cookbook titled Stuffed Cookies and Cupcakes. This cookbook has recipes for brownies stuffed with peanut butter cups, cupcakes stuffed with strawberries, s’mores tucked inside cookies.

Today I am going to make Salty-Sweet Cookie Treats. It’s a cookie filled with Nutella and sea salt. The ingredients you will need for the Salty-Sweet Cookie Treats is ½ c. Nutella Hazelnut Spread, 1 ¾ cup of sugar, divided, 2 ½ cups flour, ½ teaspoon of baking powder, ½ teaspoon of salt, ¾ cup plus 2 tablespoons of softened butter, 2 eggs, 2 teaspoons of vanilla extract, a tablespoon of sea salt and you will need parchment paper.

Now the first thing you need to do is take a sheet of parchment paper and a cookie sheet, I am going to use the Rada Cutting Board, line that with the parchment paper. Then take the Nutella and make teaspoon size mounds on the parchment paper. This is what is going to be in the middle of our cookie. The recipe makes 24 cookies so I am going to make 24 mounds.  Put these in the freezer for about 15 minutes.

In a small bowl put ¼ cup of the sugar. In a medium bowl add the flour and a ½ teaspoon of baking powder and a ½ teaspoon of regular table salt and whisk that together and set that aside. Now in a mixing bowl, add the remaining sugar and ¾ cup plus 2 tablespoons of butter.  Mix that until the butter and sugar get creamy, light and fluffy. Once the butter is well creamed and it is light and fluffy, we are going to add the 2 eggs on at a time.

Then add 2 teaspoons of vanilla extract. Let that stir until it is well combined. Reduce the speed of the mixer to low and gradually add the flour mixture. Mix just until it is combined. Once you have that combined, line a baking sheet with parchment paper.

Using a tablespoon drop batter onto to paper and flatten down. Sprinkle the top of the dough with sea salt and add the Nutella mound. Add another tablespoon of dough and seal the edges. Roll into a ball and then roll in the sugar and place on the baking sheet. Continue making until you have used up all the dough, which would be about 24 cookies so you will probably need 2 baking sheets.

Preheat your oven to 350 degrees. Bake the cookies for 12 to 15 minutes or until they are lightly brown. Cool the pan on a wire rack for 10 minutes and then you can transfer the cookies to another rack. It’s a delicious cookie with a sweet surprise inside.
