Mississippi Mud Cake Recipe

For the Mud Cake you will need:

  • 1 cup butter, melted
  • 2 cups sugar
  • 1 1/2 cup flour
  • 1/3 cup cocoa
  • 4 eggs, beaten
  • 1 cup chopped pecans
  • 1 cup coconut
  • 1 jar marshmallow creme

For the Frosting:

  • 1 stick butter, melted (1/2 cup)
  • 1/3 cup cocoa
  • 1/2 cup evaporated milk
  • 2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Preheat oven to 350 degrees. Combine 2 cups sugar, 1 1/2 cup flour, and 1/3 cup cocoa in large mixing bowl.

Add 4 beaten eggs. The Rada Handi-Stir is the best wire whisk for beating eggs as it allows good air flow.

Add 1 cup melted butter. Stir.

Add 1 cup chopped pecans and 1 cup coconut. Mix.

Add mixture to 9 x 13 inch pan using the Rada Cook’s Spoon. If pan is metal, spray with cooking spray. Even better, use the Rada Rectangular Baker, which does not require seasoning.

Spread mixture evenly across pan. Place in preheated 350 oven for 30 to 40 minutes.

In saucepan over medium heat, add 1 stick (1/2 cup) melted butter.

Add 1 cup cocoa. Mix.

Using the Rada Non-Scratch Cook’s Spoon add half cup of evaporated milk and 2 cups powdered sugar.

Add 1 cup chopped pecans and 1 teaspoon vanilla. Remove from heat before frosting reaches boil.

When the main dish is finished baking, remove it from oven. Apply marshmallow creme across cake. The Rada Super Spreader works great here.

Hi, Kristy in the Rada kitchen, and today I want to share a recipe for Mississippi Mud Cake. It’s like a gooey brownie cake and marshmallow and a yummy, fudgy chocolate frosting. Let’s get started!

First we’re going to combine 2 cups of sugar, a cup and a half of flour, and a third cup of cocoa. We’re just going to mix those together. And to that we’re going to add 4 beaten eggs. I just want to show you how great this Rada Handi-Stir works. Makes wonderful scrambled eggs because it allows air to whip into the eggs and makes them fluffy. Now we’re going to add that to our dry ingredients. We’re also going to add a cup of melted butter. We’re going to mix this in, again with our Handi-Stir. If you’re a chocolate lover you’re going to love this dessert.

Now to this we’re going to add a cup of chopped pecans and a cup of coconut. You’ll want to preheat your oven to 350 degrees and you’ll want to have a 9 x 13 pan that has been sprayed with cooking spray. I’m actually going to use this Rada 9 x 13 stoneware pan. No need to preseason it, it already has non-stick proprietary clay in it. The stoneware can go directly from the freezer to the oven. It’s dishwasher safe. It has even heating because it ensures even baking by spreading heat around the whole pan. I like it because when you make casseroles in it it keeps them hot on the table. We’re going to put this in the oven for 30 to 40 minutes. You don’t want to over-bake it, it’s like a brownie, it should have a little jiggle in the middle to it. Now we’ll put this in the oven while we mix up our frosting.

Now, one the stovetop we’re going to make our frosting for our Mississippi Mud Cake. In a saucepan over mediumheat we’re going to take a stick of melted butter and a third cup cocoa. We’re going to add half a cup of evaporated milk, 2 cups of powdered sugar. You want to make sure you keep stirring this because it is over medium heat. Then we’re going to add a cup of chopped pecans. So the frosting is almost to a boil. You don’t want to boil it. I’m going to quick add a teaspoon of vanilla and remove it from the heat. My cake just got done and we’re going to take a jar of marshmallow cream and just make little dollops. Best just to dollop it and let them melt onto the cake and tehn try to spread it. As it kind of melts onto the cake it’s easier to spread this way. You want about a quarter inch on the top of the cake.

Now this is the Rada Super Spreader, as you can see it works really well at spreading frosting, it works great with mayonnaise or peanut butter. Now we’re going to pour our frosting over the marshmallows. Now you’ll want this to completely cool in the pan. It’s very rich so I like to cut it into 1 and a half size pieces. They’re cute if you get some cupcake liners and put those pieces on there.
