Lemon Whoopie Pies Recipe
Ingredients you will need:
- 1 (18.2 oz.) pkg. lemon cake mix
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup water
- 3/4 cup butter, softened
- 1 1/3 marshmallow creme
- 1/3 cup powdered sugar
- 2 oz. cream cheese, softened
- 1 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Parchment paper
Preheat oven to 400 degrees. Add 1 pkg. lemon cake mix to mixer.
Add 3 eggs to mixer.
Add 1/2 cup vegetable oil to mixer.
Add 1/2 cup water to mixer.
Mix the ingredients.
Spread a piece of parchment paper across cookie sheet.
With a spoon, place mixture on cookie sheet, making them round and with space in-between each dollop.
Place in preheated 400 degree oven for 8 to 10 minutes.
In another mixing bowl, add 3/4 cup softened butter.
Add 1 1/3 cup marshmallow creme.
Add 1/3 cup powdered sugar.
Add 2 oz. softened cream cheese.
Add 1 1/2 teaspoon vanilla extract.
Add 1/4 teaspoon salt.
Once cookies have been removed from the oven and cooled, carefully flip each one over.
Once cookies are all flipped over, begin to spread mixture across individual cookies.
Once you’ve spread mixture across the flat surface of one cookie, place another on top to complete the whoopie. Repeat until all whoopies are made.

Hi, it’s Kristy in the Rada Cutlery kitchen, and today I’m making a recipe out of our Party Snacks to Share recipe book. This is full of sweet and sassy recipes, cool and classic, some slow cooker ones, it’s great for any kind of party or gathering. Today I’m going to make lemon whoopies. Just saying the name is fun, and they’re fun to eat, so let’s get started.
What you’ll need is a package of lemon cake mix, this is the 18 ounce size, and you’ll want to be preheating your oven to 400 degrees. So, in a mixing bowl we’re going to add the cake mix. 3 eggs. A half cup of vegetable oil and a half cup of water. So we’re just going to mix this at medium speed until all is well combined.
So now you’ll need a baking sheet. I’m going to use this Rada Cutlery stoneware cookie sheet. You want to put some parchment paper on there. Now what we’re going to do is take about 2 tablespoons of the mixture and drop that on parchment paper. You want them about 2 inches apart because when they bake they are going to spread out. I’m trying to get them more round, not so oblong shaped. We’re going to put this in the 400 degree oven for about 8 to 10 minutes.
So 1 batch of my whoopee pies is done. I’m going to let them cool completely. Meanwhile, we can mix up that fluffy filling. What we’re going to do is beat ¾ cup butter, a cup and a half of marshmallow crème. We’re going to add ¾ cup powdered sugar, 2 ounces of cream cheese, and 1 ½ teaspoon vanilla extract. A dash of salt, about ¼ teaspoon. Now we’re just going to mix this on medium speed until it’s smooth.
Now that our cakes have cooled, we’re going to make them into pies. What I’m going to do is take some of that crème and put it on. You’re going to get about 16 whoopie pies out of this so make sure you have enough filling for them all. Then you just take the top and there’s your quick lemon whoopies.
