How to Make Cheesy Prosciutto Lasagna
Ingredients you will need:
- 5 cloves of garlic, minced
- 16 oz low-fat 1% cottage cheese
- 1/2 cup fat free cream cheese
- 2 Tbsp. grated Romano cheese
- 2 1/2 tsp. basil
- 1/2 tsp. red pepper flakes
- 1 large egg
- 4 oz prosciutto
- 1 jar fat-free tomato basil pasta sauce
- 12 lasagna noodles
- 1 cup shredded, part-skim, mozzarella cheese
First mince and cut the garlic using a knife like the Old-Fashioned Butcher.
Add the cottage cheese and cream cheese, using a large spoon. We used our Cook’s Spoon.
Then add 2 tablespoons of the Romano cheese, the basil, and the red pepper flakes.
Add the egg to the mix. Use a wire whisk to whip up the egg. Our Handi-Stir works well for this.
Now with the knife used to mince the garlic, chop up the prosciutto.
Start layering everything into a 9×13 pan. If you are using our stoneware you do not need to grease the pan. First, some of the pasta sauce, then layer three lasagna noodles.
Next add some of the cheese mixture, prosciutto, and the pasta sauce again. Repeat these steps until you have used all 12 lasagna noodles.
Then add the rest of the pasta sauce. Sprinkle the Romano and mozzarella cheese on top.
Bake in the oven at 375 degrees: covered for 45 minutes and uncovered for an additional 15 minutes.
After baking, enjoy a delicious and hearty meal for under 400 calories!

Hi, Kristy in the Rada Kitchen and today I am sharing a recipe out of our “400 Calorie Dinners.” It’s satisfying, guilt-free, real life meals and they are all under 400 calories.
One of the things I like about this cookbook is that it has a restaurant guide, so some of the more famous restaurants that chose the lighter fare; foods that you can pick and it shows the calories and fat content.
Today I’m going to make a recipe called Cheesy Prosciutto Lasagna. It only has 272 calories and 5.6 grams of fat per 1/9th serving; which is a 3 inch by 4 inch piece. So let’s get started.
So to mince the garlic I like to use a big knife like this Old-Fashioned Butcher. And you just smash garlic like that. Then you just can go in and once you have your five cloves of garlic minced you’re going to put that in a bowl and to that you’re going to add one 16 ounce carton of 1% low-fat cottage cheese. And I kind of like to use the small curd and smash it a little bit. If you like the lumps in your lasagna then you can just use the large curd.
And now we are going to add a 1/2 cup fat free cream cheese. A half cup is 4 ounces. Just kind of try to smash that together using the Cook Spoon. It has a nice long handle so you won’t get you knuckles messy. Now to this mixture we’re going 2 tablespoons of grated Romano cheese, 2.5 teaspoons of basil and half a teaspoon of red pepper flakes. And then we’re going to add 1 large egg. Now I really want to whip this egg up good in here so I’m going to use one of my favorite Rada tools: this Rada Handi-Stir. Or any kind of wire whisk; you just really want to get the eggs blended really good. When it bakes then it will get a little more fluffier and give some density to your lasagna.
Alright, now we’re going to set this aside and start layering. You want to preheat your oven to 375 degrees. By the time we get this all layered it should be preheated to that temperature. So we set aside our cheese mixture and here we have some Iowa-made prosciutto. And were just going to chop that up and you want about 4 ounces and again I’m using the Old-Fashioned Butcher that we used to chop the garlic. So I go one way and then I’m going to come back and go this way.
Now in a 9″x 13″ pan and I’m using the Rada Rectangular Baker so I don’t have to season it, but you might want to season it if you are using another pan. The first layer you’re going to put a 1/2 cup of tomato basil pasta sauce, fat-free, and you’ll spread that around. Then we’re going to add three lasagna noodles. I cooked these and let them cool so they’re easier to handle. Now we’re going to put 1 cup of the cheese mixture we made. Now this Non-Scratch Spoon holds about a 1/4 cup. So I’m going to use that as my measuring. We’ll put 4 of these spoonfuls on there.
Then we’re going to put a 1/3 cup of our prosciutto and then a 1/4 cup of the pasta sauce again. Now we’re going to repeat that. 3 noodles and you’re going to repeat these layers 2 more times so use a total of 12 noodles.
This is our last layer. We’re going to end with the noodles and we’re going to put our remaining pasta sauce over that. And now we’re going to sprinkle the 1/4 cup of Romano cheese minus the 2 tablespoons we put in the cheese mixture and then 1 cup of shredded, part-skim mozzarella cheese. I’m going to cover this with foil and I’m going to bake it for 45 minutes I’m going to take the foil off and bake it an additional 15 minutes.
So our Cheesy Prosciutto Lasagna is done and ready to serve. It’s only 272 calories and 5.6 grams of fat. That’s one of the recipes in our “400 Calorie Dinners.”
