Huevos Rancheros Breakfast Casserole

Ingredients you will need:

  • 1 large can enchilada sauce
  • Corn tortillas (small)
  • 1 can black beans (drained & rinsed)
  • 2 small cans green chilies
  • 1 lb. pkg. chorizo
  • 4 C. shredded Mexican cheese blend
  • 12 Eggs
  • Green onions, chopped
  • Cilantro, chopped
  • Avocado, sliced

Recipe Serves 12 

Preheat the oven to 350 degrees. Coat the bottom of a 9″ x 13″ pan with half of the enchilada sauce.

Enchilada sauce goes into a Rada Rectangular Baker.

Cover the sauce with a layer of small corn tortillas.

Tortillas go on top of enchilada sauce.

Spread the black beans on top of the tortilla layer.

Black beans are placed on top of tortillas.

Spread the green chilies on top of the black bean layer.

Green chilies are added to tortillas.

Cook the chorizo sausage in a skillet over medium heat.

Crack the eggs over the cheese layer. Bake at 350 degrees for 25 minutes.

Eggs are cracked and dropped into the Rada Rectangular Baker.

Top with cilantro, green onions, and avocado. Yum!
