Crunchy Fried Ice Cream Dessert Recipe

Ingredients you will need:

  • 16 oz. chocolate chip or vanilla ice cream
  • 4 (8”) flour tortillas
  • 2 C. cornflakes cereal, crushed
  • Oil for frying
  • 1 ½ T. sugar
  • Cinnamon-sugar
  • 3 ½ tsp. ground cinnamon
  • Whipped cream
  • 2 eggs
  • 4 maraschino cherries
  • 1 tsp. water

First, dip a half-cup measuring cup in water.

In the measuring cup, fill with vanilla ice cream and level off.

Empty the leveled-off ice cream balls flat-side down onto a cutting board.

Freeze the ice cream balls for 2 hours or more.

Place 2 cups corn-flake cereal in a bowl. Place egg wash made from 2 eggs in another bowl.

Add 1 1/2 tablespoons sugar and 1 1/2 teaspoons ground cinnamon to cereal.

Mix and then divide the mixture evenly.

Roll frozen ice cream ball in first bowl of cereal.

Mix the newly-coated ice cream ball in egg wash.

Dip the ball into the second bowl of cereal. Set aside the ice cream ball and repeat process with others.

Set the ice cream balls in the freezer for 4 to 6 hours.

Get 4 tortillas with an 8-inch circumference, or cut a larger size down to 8 inches.

Place tortilla in a soup ladle and dip into hot oil. Using a spoon or another ladle, press down into the tortilla to keep it in place until crisp. Remove from heat, drain, and sprinkle with cinnamon and sugar. Use tortillas as a bowl for the ice cream.

Once the tortilla bowls are done, place each frozen ice cream ball in the oil for 10 seconds. Remove and place into tortilla bowls.

Top with whipped cream and cherries. Serve immediately and enjoy!

Hi, Kristi in the Rada Cutlery kitchen, and today I’m going to make fried ice cream. This is one of the recipes in our 101 Recipes with Tortillas cookbook. It’s a unique little dessert. You’ve probably seen it in restaurants, but you can make it yourself. It would be great for a Cinco de Mayo treat.

First, we need some ice cream. You’re going to need about 16 ounces of chocolate chip of vanilla ice cream. I’m going to use the Rada Cutlery Ice Cream Scoop. It cuts right through hard ice cream. I want to make cute ice cream balls. So I’m going to dip this measuring cup in water. The ice cream has to be in the freezer for 4 to 6 hours. Then I like to take this versatile Rada Cutting Board. The measuring cup gives the ice cream its shape and then you can just scoop it out. You kind of form it into a ball shape. We’re going to put them in the freezer.

We’re going to make fried tortilla bowls to put the ice cream in. You’ll want to make 4 of these ice cream balls. Now, we’ll put these in the freezer for about 2 hours.

Now we’re going to put that crunchy coating on the ice cream balls. What you need it 2 eggs that have been beaten with a teaspoon of water and you’ll need 2 cups of crushed corn flakes. To that we’re going to add 1 and a half tablespoons of sugar and 1 and a half teaspoons of ground cinnamon. I’m going to mix them.

Now we’re going to divide this into 2 separate bowls. We’re going to get our ice cream out of the freezer. We’re going to put that hardened ice cream in one bowl of the cereal mix. And then we’re going to put it in that egg wash. Then we’re going to put it in that second bowl. You’ll want to press down onto it. Then you’ll put it on another baking sheet or cutting board. You’ll put it in the cereal and kind of press it on. Roll it in the egg. Then in your second bowl of cereal. If you really want to push it on, you can do that too. Now we’re going to put this back in the freezer for another 4 to 6 hours.

Now I want to show you how to make these cute little tortilla bowls that we’re going to put our fried ice cream into. What you do is take a regular tortilla. You want to make it about an 8-inch size. I’ll take this Rada Pizza Cutter and cut off the edge and make little waves.

Now we’re going to go to the stove and take a soup ladle and fry these up. Here I have a pan of oil. I put a little piece of tortilla in there to tell me it’s ready. I’m going to take this Rada Soup Ladle and fold the tortilla. I’m going to use a spoon to hold it in there and then dip it into the hot oil. When it gets to a nice golden brown you can drain it on a paper towel. You can do the next one, let me show you again. Just fold it into that ladle. You are going to have to have a fold. We’ll hold it in place with a spoon and dip it in that oil.

You might want to keep pressing on the sides. Once it has that shape you can take your soup ladle out and press it down further in the oil. Get the bottom nice and brown.

When those are cooling you can sprinkle the sugar and cinnamon mixture on those. When you’re ready to serve it I do have some whipped topping and maraschino cherries ready. We’re going to take out ice cream ball and put it into that hot oil for 10 seconds. Now it’s golden brown. You’ll want to put it in your tortilla bowl and then add some whipped topping and cherries. Serve immediately. It’s a delicious dessert with a crispy coating and cold ice cream underneath.
