What you will need to make chiptole corn salsa:

  • 6 ears of corn
  • 3/4 cup of red onion
  • 1/3 cup of cilantro
  • 1/4 cup fresh lime juice
  • 1 – 4 ounce can of green chillies
  • 1 cup of fresh tomato
  • 3/4 cup of red pepper
  • 1 package of the Rada Chiptole Quick Mix

Hi, today I would like to share a recipe with you. It is the chipotle corn salsa. The first thing you need is six ears of fresh sweet corn. Oh by the way this recipe will be at the end of the video so you don’t need to write this all down.

I am going to cut the corn off the cob with the Rada Stubby Butcher. I like this nice for small jobs like this; it has a bit of a slicer but not as long. So smaller items like this or I like to cut up chicken with it. Once you get that removed from the six ears. Actually, sweet corn is in season right now so we have plenty of it. If you want to make this in the winter and you don’t have it available you can use three cups of frozen sweet corn that has been thawed.

The next thing you need is three fourths cup of red onion. Again, the Stubby Butcher cuts right through that onion. The Stubby Butcher is sharpened on both sides; so if you are left handed or right handed you can use it. Put that in the bowl. We will use a third cup of cilantro which I also got out of my garden.

Then you will use a fourth cup of fresh lime juice and a four ounce can of green chilies. A cup of fresh tomato and a three fourth cups of red pepper. Then a package of the Rada Quick Mix Chipotle Dip mix. Then you will mix that up.

Put that in the refrigerator for four hours or over night. It is really good on tortilla chips, or on meat such as fish, and also tacos and burritos. I like to use the Rada Ice Cream Scoop to mix this up. It’s not only for ice cream, its great to stir also. Thanks for watching and enjoy.
