Watch the video below for step-by-step directions on how to use sweet corn to make Homemade Creamed Style Corn.

Ingredients you will need:

  • 2 ½ C. fresh corn kernels (about 5 ears)
  • 1 T. sugar
  • 1 T. flour
  • 3 T. butter, melted
  • 1 C. (8 oz.) heavy cream
  • Salt and pepper to taste

Remove the kernels with the peeler.

Cut the corn kernels from the corn cob (we used a vegetable peeler). After the first cut firmly scrape the bare corn cob (called milking the cob). You will get a milky substance that enhances the flavor of the cream style corn.

Note:  See the Rada blog post Tips for Cutting Corn on the Cob for a demonstration using various Rada knives and utensils for cutting sweet corn kernels from the cob.

The Best Corn Cutter

Rada Mfg. Co. developed the Deluxe Vegetable Peeler with corn cutting in mind as one of its many uses.  It is a larger version of the wildly popular Rada Cutlery Vegetable Peeler.

The Deluxe Vegetable Peeler handle and blade are both longer and larger.  The larger blade is perfect removing sweet corn from the cob, but also other larger items such as sweet potatoes and eggplant.  The bigger handle provides extra leverage and comfort to make large peeling chores, such as preparing a bag of potatoes for Thanksgiving Dinner, easier.

Both Rada Cutlery Vegetable Peelers are available locally from Fundraising Groups and Independent Sellers.  If you do not have a convenient local source, the peelers and other Rada Cutlery items can be purchased from the Rada Kitchen Store website.  You will find links below!

Hi, Kristi at the Rada kitchen. Today I’d like to share a recipe for Homemade Creamed Style Corn. This uses fresh sweet corn. You need two and a half cups of that, which is about 5 to 6 ears. I’d like to show you a neat trick that we use the Rada Deluxe Peeler to remove the kernels from the cob. And it’s so easy to get those kernels off.

Now for this recipe you want to make sure you get the milk of the corn. You want to go back and make sure you get all that milky substance inside. If you’re using a knife, you just run the blade and you get all that milky part, and that’s extra sweet.

So once you have the kernels and the corn milk removed from the cob, put that in a bowl. To the bowl we’re going to add three tablespoons of melted butter, a tablespoon of sugar, and a tablespoon of flour. We’re going to add this to a skillet on the stove.

So add this mixture to the skillet, and we’re going to cook this over medium heat for five minutes. After you cook this for about five minutes, then you’re going to add the one cup of heavy cream, or eight ounces. Now we’re going to cook this for about 10 minutes, or until it’s to your liking of how thick you like it.

Once your homemade creamed corn is thickened, you can season it with salt and pepper, and it’s ready to serve!
