Summertime is here! That means lovely weather and rewarding camping trips. This potato wedge recipe is perfect for any camping trip, or for grilling out on a sunny day. It’s an easy and quick grilling recipe that does not take long to make. Potato Wedge Ingredients:

  • 2 to 3 large potatoes (depending on how many people you are serving) washed and scrubbed
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 tsp. dried oregano
  • Salt and pepper to taste

How to grill potato wedges

Directions:

  1. Cover the grate of the grill with aluminum foil.
  2. Preheat grill or place grilling grate over campfire.
  3. Cut potatoes into 1/3″ to 1/2″ wedges.
  4. Brush potato slices with olive oil and sprinkle with dried thyme and dried oregano.
  5. Lay potato wedges over aluminum foil on grill.
  6. Sprinkle with salt and pepper to taste.
  7. Grill wedges to desired tenderness, turning occasionally
  8. Serve and enjoy!
