<h1><strong><em>Plain Food Chopper (Item R115P)</em></strong></h1>

<p>The Plain Food Chopper has a 3&#8243; diameter and is used for small dicing &#8211; chop eggs, celery, crumble ground beef, cut biscuits, and sugar cookies. Rada also offers a Serrated Food Chopper for medium dicing .</p>

<h3>Hamburger Slider Video Transcript:</h3>
<p>Today we are using the Rada Food Chopper. This is a pretty neat little utensil. I like to use it to cut biscuits, you can make sugar cookies with it. Dice onions, dice parsley, dice fresh herbs, but a really neat trick I learned to do with this is use it as a burger press. Not too many people know what a burger press is. It is what you use in a restaurant to form a burger to make it uniform so it cooks evenly and it cooks at the same temperature throughout the burger.</p>
<p>What we have here is two pounds of ground beef, it&#8217;s an 80/20 blend. If I am grilling hamburgers I want at least twenty percent fat in my ground beef. Reason being is it just adds flavor and it doesn&#8217;t dry out. You are stirring at a high heat, so you need that fat in there to keep the juices in the burger itself. So I&#8217;ve laid that out and I&#8217;ve got it in a kind of rectangular form.</p>
<p>I want to get twelve mini burgers or sliders out of this. The first thing I want to do is take a small cooks knife and cut the hamburger in half. Then I am going to cut each half into half. Then cut it into thirds, you do not have to be exact on this just get it close to where it needs to be. Next thing we are going to do is take the burger ring and take a portion out, get it formed. Notice when you make burgers at home this is what you end up with; kind of a flat burger, not uniform.</p>
<p>Make that into a ball and put it into the food chopper and press it in. If you don&#8217;t have enough, take a little from the next one, it is pretty uniform so you will pretty much get exactly about two and a quarter; two and a third ounce burger out of it. You pull the ring off and look at that perfect burger you have, look at that mini burger.</p>
<p>It&#8217;s going to cook evenly whenever you are grilling to whatever temperature you want it to be. If you want it well-done; it will be juicy throughout. So we are going to get twelve burgers out of that. Again, I like using this for biscuits, cookies, dicing onions. It is real simple and it goes pretty quick. I&#8217;m not quite there so I&#8217;m going to cheat and take some.</p>
<p>When I am making these, we have actually done a recipe we&#8217;re making mini burgers, where you buy dinner rolls from the store. Just the small square dinner rolls, fresh baked dinner rolls. Then I make our Rada Bacon Cheddar Dip Mix and our Chipotle Chili Dip Mix; we use it for toppings on the burgers. It is just a really unique way to serve these burgers. Also, you can use the dip for chips and everything like that. So you have your chips and dip there, but also a topping for the burgers.</p>
<p>You can grill these outside or you can do them in a pan in your kitchen, either way they work really well. You&#8217;ve got  your garnishes with pickles and onions, jalapenos. I even like to use our garden salsa mix with these burgers to make Mexican burgers. We are just about there. So serve four to six, if you got hungry people then they can have three or two to three burgers is just about right. There&#8217;s our burgers using our food chopper.</p>

<p><strong>Video Transcript</strong></p>
<p>Hi Kristy at the Rada Kitchen and today I&#8217;d like to share with you the fruit pizza recipe I used to make our flag fruit pizza on the cover of our catalog, 2012-2013. It is also on our <a href="http://www.radaquickmixrecipes.com/">www.radaquickmixrecipes.com</a> website.</p>
<p>The ingredients you will need are a tube of sugar cookie dough, or you can use your own homemade recipe, 8 oz. cream cheese softened, 1/2 package of Island Coconut Rada Quick Mix and 2 to 3 cups of sliced fresh fruit, I am making the flag so today I am using sliced strawberries and blueberries. You could also use kiwi, oranges and red or green grapes.</p>
<p>The first thing you will do is cut your cookie dough. I am going to cut it into slices like the package says and I am using the Rada Cookie Sheet. It doesn&#8217;t matter if these break up because we are going to form it anyway. This would make a great flag pizza for the 4th of July or a welcome home party for a soldier or veteran. Now, what I have learned with this cookie dough is that it expands as it cooks so you don&#8217;t want to get it to the very edge. It&#8217;s going to expand, probably, 3 inches or so. So you kind of form it with your fingers into a rectangular flag shape. It will keep the shape, it will just get bigger as it cooks. Ok, we will put it in our pre-heated oven according to the cookie dough instructions on the package.</p>
<p>So while the crust is in the oven baking we&#8217;ll mix up the filling. So we have 8 ounces of softened cream cheese and we are going to take the Handi-stir and you&#8217;re going to add half the package of the Island Coconut, you could actually use the Vanilla Latte or you could use the Raspberry, it doesn&#8217;t matter which flavor you use&#8230;(mixing). Alright, you might want to put that in the refrigerator until your crust gets baked and cooled. Meanwhile you can slice up, I am using strawberries because it&#8217;s the flag so I am going to cut it into 3 or 4 slices. I am going to make them even so they lay even. When I put them on the pizza you can either stack &#8216;em or lay them flat, but we&#8217;ll show that when we get back with the crust.</p>
<p>So our cookie dough crust is cooled, baked and cooled, and now we&#8217;re going to add our sweet mix dip that we made, we did the Island Coconut. I am using the Super Spreader to spread it. I&#8217;m leaving it on this cookie sheet, you don&#8217;t have to transfer it, it will be easy to carry that way, it has little handles on each end. And now we will make it look like a flag.</p>
<p>So with  my spreader I am going to kinda draw how you think the flag will look. You will cover that up anyway&#8230;.(placing blueberries). So now you have your blueberries on and now we&#8217;re going to do the strawberries, they are the stripes. Now you want these to all face the same direction so it looks uniform. So you leave a little space to represent the white stripes. So I have all the strawberries on and there&#8217;s the flag fruit pizza and a good way to cut this would be with the Rada Pizza Cutter and you can serve it with the Rada Severspoon.</p>

<p>Potluck Day is a semi-annual event that all the employees look forward to in the spring and fall! Pictured above is the salad and dessert tables.</p>
<p>The 100 hard working employees at Rada Mfg. Co. always look forward to this event &#8211; plus we get a little extra time off work to enjoy all the delicious food. Half of the employees furnish a dish in the spring and the other half bring a dish for the fall potluck. Sounds like a lot of food but most of the time you take home an empty bowl or dish!</p>

<h2><em>Recipe for &#8220;Crockpot Asparagus&#8221;</em></h2>
<p>Ingredients:</p>
<ul>
<li>1 can cream of mushroom soup</li>
<li>1 can cheddar cheese soup</li>
<li>Fresh Asparagus</li>
</ul>
<p>Directions:</p>
<ul>
<li>Fill the crockpot as full as you want with fresh asparagus, at least half full, stir in the mushroom soup and cheddar cheese soup. Cover and cook on high 1 1/2 to 2 hours, or until asparagus is tender. Serve!</li>

<h2><em>Recipe for Strawberry Poppy Seed Salad</em></h2>
<p>Ingredients:</p>
<ul>
<li>2 bags lettuce (pre-chopped lettuce blend with sliced carrots, red cabbage, romaine, radishes, etc.)</li>
<li>1 can mandarin oranges, drained well</li>
<li>1 can pineapple chunks, drained well</li>
<li>2 C. fresh sliced strawberries</li>
<li>1 C. fresh blueberries</li>
<li>1/2 C. pecans* (whole)</li>
<li>1 bottle creamy poppy seed dressing</li>
</ul>
<p>Directions:</p>
<ul>
<li>Toss together; add a bottle of creamy opppy seed dressing to taste at time of serving.</li>
</ul>
<p>*Spread pecans out on cookie sheet in 350 degree oven for 5 to 6 minutes until toasted.</p>

<p>Grilling is always great fun in the summer time. But are you a master griller? Read on to find out some new grilling tips, marinade and brine recipes, and some foods we bet you&#8217;ve never grilled before!</p>
<h1><em>Basic Grill Tips</em></h1>
<ul>
<li>Preheat a gas grill for 10-15 minutes prior to cooking.</li>
<li>Clean grates with a wire brush before cooking too, especially for more delicate meats.</li>
<li>To prevent foods from sticking to the grate, dip a folded paper towel in canola oil and rub it over the grates until lightly coated with oil.</li>
<li>Trim excess fats from meats&#8211;this will prevent flare-ups.</li>
<li>Mix seasonings into ground meats before grilling.</li>
<li>Soaking meats in a brine or marinade will increase flavor and juiciness.</li>
</ul>
<h1><em>What is Marinade &amp; Brine?</em></h1>
<p><img class="alignnone size-medium wp-image-5968" alt="Marinading Steak" src="http://www.radacutlery.com/blog/wp-content/uploads/2013/05/Rada_steak_lg-300x201.jpg" width="300" height="201" /></p>
<p>Marinades and brines add flavor, moisture &amp; tenderness to meats and seafood before grilling. These flavory substances are brushed on to the meats before they are grilled.</p>
<p>There are two good methods to marinating meat &amp; seafood. For quick clean-ups, place the food in a large heavy-duty resealable plastic bag resting in a large bowl. Poru the marinade over the food, seal the bag and gently turn it until meat or seafood is well caoted.</p>
<p>Alternatively, use a non-reactive container like a shallow glass baking dish or stainless steel or plastic bowl (never aluminum). Place meat in container, pour marinade over top, turn the pieces several times until well coated and then cover the dish. Always refrigerate meat or seafood while it marinates and turn it several times to incorporate flavors.</p>
<h1><em>Marinade &amp; Brine Recipes</em></h1>
<p>Here are some fun marinades &amp; brines to try with all kinds of meats!</p>
<h3>For Poultry: Tropical Marinade</h3>
<ul>
<li>1/2 cup pineapple juice</li>
<li>2 tablespoons preserves</li>
<li>1 tsp. ground ginger</li>
<li>1 tsp. dry mustard</li>
<li>1/2 tsp. salt</li>
</ul>
<p>In a small bowl, whisk together pineapple juice, preserves, ginger, dry mustard &amp; salt until well blended. Pour mixture over chicken &amp; refrigerate to marinate meat for 3-4 hours, turning occasionally. To cook, drain and discard marinade. Grill chicken. Marinades 4 chicken breasts.</p>

<h3>For Pork: Apple Cider Brine</h3>
<ul>
<li>1/2 cup coarse salt</li>
<li>1/2 cup brown sugar</li>
<li>1 tsp. dried thyme</li>
<li>1/2 tsp. whole black peppercorns</li>
<li>1/2 tsp. whole cloves</li>
<li>2 cups unfiltered apple cider</li>
<li>1 cup ice cubes</li>
<li>olive oil</li>
</ul>
<p>In a large saucepan over medium heat, mix 1 cup water, salt, brown sugar, thyme, peppercorns and cloves; boil for 2-3 minutes until sugar and salt dissolve. Remove from heat; stir in cider and ice. Place pork chops in an extra-large resealable plastic bag. Pour brine over chops, seal bag and refrigerate for 6-12 hours.</p>
<p>To cook, lightly oil the grate and preheat grill to medium heat. Drain chops, rinse and pat dry; discard brine. Brush with oil and place over direct heat. Cover grill and cook for 12-16 minutes, turning once or until internal temperature reaches 160 degrees.</p>

<h1><em>Fun Foods You&#8217;ve Probably Never Grilled</em></h1>

<p>• Corn on the cob; soak corn in cold water for 10 minutes, remove the silk and grill with the husks on.</p>
<p>• Zucchini and summer squash; cut them lengthwise or on a diagonal and brush both sides with olive oil</p>
<p>• Tomatoes and peppers; leave them whole and place them over the hottest part of the grill.</p>
<p>• Asparagus; lightly coat with olive oil and sprinkle with salt. Lay spears directly on the grill for about 5 minutes</p>
<p>• Pizza; use a premade crust and you choose the toppings. Place the pizza directly on the grill until the cheese is melted and slightly browned.</p>
<p>• Quesadillas; place one tortilla on the grill, sprinkle with a bit of cheese and other toppings, then top it off with the second tortilla. Remove from grill once it is browned and melty.</p>

<p>What you will need:</p>

<li>2 cups (about 14 whole) graham cracker crumbs</li>
<li>1/3 cup butter, melted</li>
<li>1 cup sugar, divided</li>
<li>three 8 oz. packages cream cheese, softened</li>
<li>1 teaspoon vanilla</li>
<li>3 eggs</li>
<li>1/2 cup mashed bananas</li>
<li>1 cup halved strawberries</li>
<li>1 banana sliced and tossed with 1 tsp. lemon juice</li>
<li>one 8 oz. can chunked pineapple drained or one fresh pineapple diced</li>
<li>1 container whipped topping</li>
</ul>

<p>Hi, Kristy at the Rada Kitchen. Today we&#8217;re going to make a recipe out of our cookbook called 101 Recipes for Bananas. Today I&#8217;m going to make banana split cheesecake squares.</p>
<p>The ingredients you&#8217;ll need are three 8 oz. packages of cream cheese softened, two cups of graham cracker crumbs (14 whole graham crackers that have been crushed), a third cup margarine/butter melted, a teaspoon of vanilla, a cup of sugar we&#8217;ll divide later, 3 eggs, a half cup of mashed bananas, and later for decoration, we&#8217;ll need a cup of halved strawberries, a banana we&#8217;re going to toss with lemon juice, and some chunked pineapple.</p>
<p>So the first thing we&#8217;re going to do is mix our crushed graham crackers with butter. Now to crush graham crackers, I put them in a Ziploc bag and take a rolling pin and crush them up. In a bowl, add a third cup melted butter to graham crackers. Mix it up. Then add a fourth cup of sugar. On the recipe, it said sugar divided, so that&#8217;s what it means, we&#8217;re not going to use the whole cup. To this, we&#8217;ll add a fourth cup.</p>
<p>Now we&#8217;re going to put our crumbs into a 9&#215;13 baking pan. Then you want to press it into the bottom of the pan.</p>
<p>I have my oven preheating at 350 degrees. Now we&#8217;re going to make the cheesecake filling. In the mixer, you&#8217;ll add the three 8 oz. packages of cream cheese and then the rest of your sugar, the 3/4 cup, and a teaspoon of vanilla. Then we&#8217;re going to mix that so it&#8217;s all mixed really well.</p>
<p>Now we&#8217;re going to add our three eggs. I like to add them one at a time till they&#8217;re gradually well blended, not overbeat. Now to make it a banana split, we&#8217;re going to add a half cup of mashed bananas. Really ripe bananas work best when you have to mash them for recipes like that.</p>
<p>Once the bananas are all blended in, we&#8217;ll pour the mix into our pan with the graham cracker crust. Now you&#8217;ll put this in the oven at 350 degrees for 30 minutes until the center is almost set.</p>
<p>So my cheesecake is baked, I let it cool, and I put it in the refrigerator for 3 hours or overnight, and now I&#8217;m going to put the toppings on. You can put all the toppings over the cake, or you can do what I&#8217;m going to do&#8211;put one fruit on each cake.</p>
<p>First you&#8217;ll need a banana that&#8217;s sliced. To keep the bananas from getting brown, I&#8217;m going to put them in a bowl with some lemon juice. Then I&#8217;m going to put some fresh pineapple with the French Chef knife. It&#8217;s really sharp&#8211;it cuts that top off easily. Cut the bottom off, slice it in half. Pineapple has a hard core in the middle you don&#8217;t want to eat. So I&#8217;m going to cut the half into three and then I&#8217;m going to cut down the core. Now I&#8217;m going to go around and cut off the outside. Then cut individual slices.</p>
<p>Slice some strawberries. Put some whipped cream on top of the cake, then banana, some pineapple, and then a strawberry slice. Top it off with a cherry and chocolate syrup. That&#8217;s the banana split cheesecake. It&#8217;s in the 101 Recipes Using Bananas Cookbook. It has everything from appetizers, beverages, main dishes and desserts.</p>

<p>Hi, Kristy at the Rada Kitchen. Today I&#8217;m going to make a recipe out of a cookbook we offer. It&#8217;s called No-Bake Cookies, Bars and Pies. It has 120 different recipes for scrumptious bars, tasty cookies and delicious pies. You don&#8217;t need the oven and you can mix them up in a matter of minutes, and they&#8217;re homemade.</p>
<p>So today I&#8217;m going to make salted nut roll bars. If you love the candy, you&#8217;ll love these. You will need a microwave-safe bowl, a 9&#215;13 greased pan. I&#8217;m going to use the Rada Stoneware 9&#215;13 rectangular baker. A 10 oz. package Reese&#8217;s peanut butter chips, a 14 oz. can of sweetened condensed milk, 3 cups of miniature marshmallows, and a jar of salted or dry roasted peanuts.</p>
<p>First, you&#8217;ll combine a can of sweetened condensed milk into your microwave safe bowl and the bag of Reese&#8217;s peanut butter chips and the three cups of marshmallows. I&#8217;m going to stir it with the Rada Cook Spoon. These are even recipes that children can help you with.</p>
<p>Now we&#8217;re going to put these in the microwave for 2 and a half minutes and we&#8217;ll stir it every so often.</p>
<p>When it&#8217;s all microwaved, I stirred it every 30 to 40 seconds to make the marshmallows all creamy, you&#8217;ll take half the jar of peanuts. You&#8217;ll put those in the bottom of your 9&#215;13 pan that has been greased. Then you&#8217;ll pour your mixture over top. Evenly layer it.</p>
<p>Once you have all the filling in there, you&#8217;ll take the rest of your peanuts, sprinkle those over the top, evenly spread them out, and then put in the refrigerator until they are firm&#8211;about an hour.</p>
<p>So our salted nut roll bars have been in the refrigerator for about an hour and they&#8217;re ready to cut and serve. It makes about 12 servings. They&#8217;re very delicious. Your family will appreciate them, and it was easy to make. Just one of the more than 120 recipes in the No-Bake Cookies, Bars and Pies.</p>

<li>2 liters Lemon-Lime Soda</li>

<p>Hi, Kristy at the Rada Kitchen, and I just made a batch of Luscious Slush Punch for a graduation party. I found this recipe in the Santa&#8217;s Favorite Holiday Treats and Christmas Sweets. It&#8217;s just not recipes for the holidays. This punch works great for graduations or bridal showers. It&#8217;s delicious and easy. The coloring took strawberry Jell-O, but if you had a color theme, you could make lemon lime Jell-O to make it green or any color to match your decor. There&#8217;s over 130 recipes in this cookbook.</p>

<p>1. Mix cream cheese until it is soft in mixer.</p>

<p>2. Add mint flavoring when cream cheese is soft. Then add coloring. Start with a little then wait and see how the color turns out. You may need to add more depending on your preference. Mix.</p>

<p>3. Gradually begin adding powdered sugar. Be careful&#8211;this step can get messy! You may have to knead the remaining powdered sugar in later when you remove the dough.</p>

<p>5. Use a food mold. You can buy these at most craft or cooking stores. Take small chunks of the dough and press into the mold. Remove mint from the mold and place on plate.</p>

<p>Easy recipe and instructions to make mints for graduations, weddings, holidays and other special occasions.</p>
