Chicken Piccata

How to Make Chicken Piccata

What you will need:

Ingredients for Chicken Piccata

  • 2-4 boneless skinless chicken breasts
  • 1 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 can quartered artichoke hearts, (drained)
  • 1 ½ cups water
  • 1 pkg. Scampi Sauce Quick Mix

Place chicken breasts between plastic wrap and pound thin. Cut breasts in half.

In a non-stick skillet over medium heat, cook chicken in oil for 2-3 minutes per side. Remove from skillet and set aside.

Carefully add wet ingredients and scampi sauce

Carefully add water and stir in the lemon juice and Scampi Sauce Quick Mix. Ad artichoke hearts.

Let your chicken and scampi mix simmer

Return chicken to pan and simmer over low heat for 5-7 minutes.

Making Chicken Piccata

Serve with  Garlic Parmesan Bread and sautéed vegetables.

Chicken Piccata Video Transcript:

Hi, Kristi at the Rada Kitchen, and today I’m making chicken piccata. You make the recipe from the Rada scampi sauce. You’ll need 2-4 skinless, boneless chicken breast that I’ve pounded thin, a package of Rada Quick Mix Scampi Sauce, a can of artichoke hearts, a tablespoon of olive oil, two tablespoons of lemon juice, and a cup and a half of water.

We’re going to make this recipe on our stove top. So first we’re going to heat about a half a tablespoon of olive oil on medium heat in a non-stick pan. Then the chicken that you pounded, we’re going to cut into pieces. This is a Rada Granny Fork, it works really good to hold meat while you’re cutting it. It turns meat easily in the pan when you’re frying it.

Cut them to the size you prefer. When our oil gets hot, we’ll put it in the pan. Cook it three to four minutes on each side.

My chicken has cooked 3-4 minutes on each side. Now if your pan is big enough, you can remove these to a plate. You’ll make your sauce right in this pan. My pan’s kind of small, so I’m going to switch and make my sauce in a bigger pan. To this, you’ll add a cup and a half of water, the scampi sauce mix, two tablespoons of lemon juice, then you’ll stir this together.

Now I’ll add my can of quartered artichoke hearts. Then you’ll add back in the chicken. That’s going to simmer about 5-7 minutes on low.
