Baked Mashed Potatoes Recipe

Ingredients you will need:

  • 8 to 10 potatoes, boiled and mashed
  • 1 carton (1/2 pt.) sour cream
  • 1 t. garlic salt
  • 1/4 C. grated onion
  • 1 – 8 oz. pkg. cream cheese
  • 2 t. paprika
  • 1/4 C. butter

Peel the potatoes, leaving small amounts of skin on if preferred. The Rada Vegetable Peeler is ideally suited for this, making skin removal a nearly effortless task.

Cut the potatoes into small pieces. Place in a pan, add water and a pinch of salt, and bring to a boil for 20 minutes. In a bowl, add 1/2 pt. sour cream and 8 oz. pkg. cream cheese. Mix until smooth. To mixture, add 1/4 C. grated onion and 1 tsp. garlic salt. The Rada Super Parer is excellent for chopping the onion into fine pieces.

Chop the boiled potatoes, preferably with the Rada Plain Food Chopper, which will efficiently break up the potatoes. Using a mixer, combine the chopped potatoes and the cheese and cream mixture.

Place combined product into a casserole dish.
Stir.

Add 1/4 C. butter to top of dish. Add 2 tsp. paprika. Place in preheated 350 degree oven for 45 minutes.

Hi, Kristy in the Rada kitchen, today I’m making a recipe out of our cream cheese cookbook, and it’s baked mashed potatoes. They have a little kick to them, you put in cream cheese and sour cream, a little bit of garlic salt, and you bake them in the oven. They’re a wonderful side dish for Easter or Christmas. My kids actually ask for them every time I make mashed potatoes.

You will need 8 to 10 potatoes, any variety works. And then, we’re going to peel these. It goes really fast with this Rada Vegetable Peeler. And I sometimes even leave some of the peeling on, that’s where all the nutrients are. And you can slice them pretty small. The smaller you slice them, the faster they’ll boil. So, just cut them into a pan, put enough water on, just to cover them, and I like to add just a little bit of salt, then bring them to a boil, let them boil for about 20 minutes.

My potatoes are done boiling, you know they’re done when you point a fork in them and they easily break apart like that. They’re still hot, but I drained the water off. Now in a bowl we’re going to add an 8 ounce package of cream cheese, and a half pint of sour cream, and I’m just going to mix those together. So mix that until it’s smooth.

Now, to this we’re going to add a teaspoon of garlic salt and a fourth cup of onion, you can grate it, I used the Rada Super Parer, which chopped it really fine. I’m just going to mix that one more time, real quick. And now we’re going to add our potatoes that are still hot. I’m just going to slightly chop these up with the Rada Plain Food Chopper. And then I’ll go ahead and use a mixer.

It helps to have the potatoes still warm, it’s going to melt that cheese into the, so when you go to mix that cheese, it’s going to be really creamy.

Now our potatoes are nice and creamy, so we’re going to put them in a casserole dish. You might want to butter your dish, this is a Stoneware Baker from Rada that doesn’t need any seasoning. Now these were yellow potatoes, so it gives it that nice yellow color, if yours aren’t coming out this yellow, that’s why they aren’t, I didn’t add any extra butter, which we are going to add butter. And you’ll want to preheat the oven to 350 degrees. And now we’re going to dot the top of this with a fourth cup of butter. I kind of like to put mine in the middle. Kind of break it up a little bit. And the last thing we’re going to sprinkle 2 teaspoons of paprika. More or less to your liking. And we’re going to put that in the oven for 45 minutes.
