Basic Beef and Potatoes Hobo Dinner Recipe

Ingredients you will need:

  • 1 medium onion, peeled and sliced
  • 1 lb. lean ground beef
  • 4 medium potatoes, peeled and sliced
  • 4 medium carrots, peeled and sliced
  • Salt and pepper
  • Garlic salt
  • Seasoned salt
  • Butter, optional

Lay out 4 sheets of 12″ heavy duty foil.

Slice 1 medium onion into several slices.

Place onion slices on the center of foil, making a base for your hamburger patty to go.

Kristy places onion on foil.

Place 1 lb. lean ground beef in a bowl. Add small amount of water to beef so that it will effectively steam the vegetables while cooking.

Kristy prepares beef for the hobo dish.

Shape the ground beef into four hamburger patties.

Kristy makes ground beef into patties.

Place the hamburger patties on top of the onions.

Kristy places hamburger patties on onions.

Peel and slice 4 medium potatoes.

Place the sliced potatoes on top of the burger and onion.

Peel and slice 4 medium carrots.

Add salt and pepper, garlic salt, and seasoned salt. Also add butter if desired.

Take the pouches and start by folding as pictured.

  • Place the sliced potatoes on top of the burger and onion.
  • Peel and slice 4 medium carrots.
  • Add salt and pepper, garlic salt, and seasoned salt. Also add butter if desired.
  • Take the pouches and bring opposite sides of the foil together above the food and fold them over once to make a 1' crease at the top. Fold the foil over 2 more times, but leave several inches of space between the food and the top of the foil pack, like a tent. Fold or roll the ends of the pack together toward the center to make tight seals.
  • Bake in preheated 350 degree oven for 20 to 30 minutes. Enjoy!

Notes

OVER A FIRE: Place double-wrapped foil packs on medium-hot coals for 16 to 25 minutes or until vegetables are tender and meat is fully cooked. Move packs and turn them over during cooking.
ON THE GRILL: Preheat grill to medium-high heat. Place foil packs on the grill over direct heat, close the lid and cook for 18 to 25 minutes or until vegetables are tender and meat is fully cooked.

Hi, it’s Kristy in the Rada Cutlery kitchen, and today I’m making a recipe out of one of our popular cookbooks titled Fix It In Foil. They’re recipes that you make ahead, you can freeze or store until you’re ready to bake. The best part is that since they’re made in foil, they’re easy to throw away. This book also has instructions to make them in the oven, grill them, or make them over a camp fire so it’s really a useful cookbook. It has everything from desserts to side dishes to sandwiches. But today we’re going to make a beef hobo pack.

This hobo dinner in a pouch is going to make 4 lunches, so you’ll need 4 sheets of 12 inch heavy duty foil. Then you’ll need sliced onion, medium onion, peel it however thick you cut your onion, I slice it kind of thin. This Rada Cook’s Knife works really good at slicing onions to the thickness you prefer. So now, the onion is going to be underneath your hamburger patty. You can lay that slice in the middle of your foil.

These are going to be quarter pounders. You just mix that water into the beef and the water will steam the vegetables as it cooks. So you can just make that into fourths and make them into patties. Now we’re going to take about 4 medium size potatoes. If you like, keep the peeling, I personally like peelings on my potatoes. I like to cut these pretty thin. Again, you can use this same Rada Cook’s Knife that you used to cut the onion. These knives are made in the USA and are hand sharpened. They’re good for right and left-handed users. Once you have your potato sliced you are going to arrange those on top of your hamburger patties.

Now we’re going to take 4 medium size carrots and peel these with the deluxe Rada Vegetable Peeler. It makes this fast and easy. Now I’m going to go and chop those. The thing about these foil meals is that you can make them in the morning before you go to work and just have somebody pop them in the oven for you, they will cook for a half hour. Or if you’re home late, just pop them in the oven.

Okay, so now we’re going to add these carrots. My mom used to make these, she’d even put a cabbage left on it, and you can do that, too, or use frozen mixed vegetables. I like to take garlic salt, however much you prefer. And then Rada Cutlery has this burger and fry seasoning, it’s great on everything, I’ve even roasted chicken with it, it gives everything great flavor.

So now we’re going to make a tent pack out of this. What you do is bring up the middle. You want the steam to cook the vegetables so you don’t want the tinfoil down tight on them. Bring the tinfoil up to the middle and fold about an inch down, you just don’t want it flat on the food, this is called the tent pack. I’m going to do it one more time just to make sure that gets sealed. If you have room you can do it again. And I just like to roll the ends. I’m going to put these in the oven for 20 to 30 minutes.
